Ingredients for Steamed Giant Snakehead Fish with Onion For 4 people

Giant snakehead fish 1 fish (1 – 1.5kg) Spring onions 50 gr (cut into pieces) Chili peppers 3 pieces (sliced) Minced garlic 2 tablespoons Fried garlic 3 tablespoons Chili sauce a little Tamarind 15 gr Fish sauce 2 tablespoons Common seasoning a little (MSG/seasoning powder/sugar)

How to choose fresh giant snakehead fish

  • For live fish, you should choose those that swim vigorously, have clear eyes, red gills, shiny scales, and skin without any unusual colors.
  • For dead fish, pay attention to choosing fish with clear, bright eyes that are not cloudy. The scales should be tightly attached to the body and there should be no slime. The mouth should be closed, and when pressed, the flesh should be elastic.

How to Prepare Steamed Giant Snakehead Fish with Onion

  • Prepare the Giant Snakehead Fish

    After purchasing the giant snakehead fish, soak it in diluted salt water for about 10 minutes, then clean the intestines. Next, use a knife to scale the fish and scissors to trim the tail and fins of the fish.

    After cleaning the fish, rinse it several times with water to remove the slime on the skin, and let it drain.

    Make two diagonal cuts on the body of the fish so that the marinade can penetrate the flesh better.

    How to prepare giant snakehead fish without a fishy smell:
    • Be sure to clean the blood and the cloudy white membrane inside the fish’s belly.
    • After cleaning, you can soak the fish in diluted salt water or rice washing water for about 15 minutes, then rinse with clean water; this will help reduce the fishy smell.
    • Alternatively, you can also rinse the fish with vinegar mixed with cold water, which will quickly reduce the fishy smell.

  • Marinate the Fish

    After cleaning the fish, place it on a plate or in a steamer lined with aluminum foil, and marinate the fish with 1 teaspoon of sugar, 2 teaspoons of seasoning powder, and 1 teaspoon of monosodium glutamate.

    Next, add 1 tablespoon of minced garlic and 2 tablespoons of fried garlic on top of the fish. Use your hands to rub the marinade evenly on both sides of the fish.

    After letting the fish marinate for 15 minutes for the flavors to absorb, place the fish in a steaming basket or large pot, and steam the fish for 30 minutes.

    Tip: You can add a little white wine to the steaming water, the aroma of the wine will help eliminate the fishy smell.

  • Making tamarind fish sauce

    First, soak the tamarind in hot water to soften it, then use a sieve to filter out the tamarind pulp to obtain the tamarind juice. Add 4 tablespoons of sugar to the tamarind juice and bring to a boil until the sugar dissolves and the mixture thickens slightly before turning off the heat.

    Add 2 tablespoons of fish sauce, 1 tablespoon of fried garlic, and 1 tablespoon of minced garlic to the tamarind mixture, and stir well. If you like it spicy, you can add 1 minced chili.
