How to Choose Good Quality Chicken Eggs
- Fresh chicken eggs usually have a slightly rough shell, with many tiny bumps, and the outer shell is a dark brown, uniform color.
- You should not buy eggs that are cracked or have unusual black spots on the shell, as these eggs have been kept for a long time and may have gone bad.
- Additionally, you can check by shaking the egg; if you hear a noise while shaking, the egg has been stored for a long time, and the louder the noise, the more likely the egg is spoiled.
- Moreover, to check the freshness of the egg, you can shine a light through it or roll a piece of paper and shine the egg under sunlight. A fresh egg will have the yolk balanced in the middle, with an orange or pink color.

How to make Deviled Eggs

Boil and peel the eggs
Place a pot on the stove, add about 1 liter of water, gently place 10 chicken eggs in, turn on the stove, and adjust to high heat.
Add 1 teaspoon of salt to the pot, stir the eggs in one direction. Then, cover the pot and boil the eggs for 9 minutes.
After 9 minutes, remove the eggs and immediately drop them into cold water. Peel the 10 eggs one by one.
Tip: After boiling the eggs, dropping them into cold water will make peeling them easier. -
Separate the egg yolks and make the filling mixture
After peeling 10 eggs, cut each egg in half lengthwise. Separate the egg whites into a separate plate.
The egg yolks are placed in a bowl, mashed with a fork, then add 2 tablespoons of yellow mustard, 2 tablespoons of mayonnaise, 2 teaspoons of lemon juice, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper.
Next, mix this mixture well so that the egg yolks blend completely with the spices to create a slightly thick filling mixture. Use a hand mixer to beat for another 3 – 5 minutes to make our filling smoother and more even.
Put all the filling into a piping bag and place it in the fridge refrigerator until needed.

Prepare and sauté the salted pork belly
Cut the salted pork belly in half lengthwise, then dice it.
Place a pan on the stove and add all the cut meat to sear. Try to stir evenly to prevent the meat from burning.
Once the meat is seared until slightly golden and crispy, pour it through a sieve to remove the rendered fat and help the meat drain excess oil.

Make the deviled eggs
Take the filling mixture out of the refrigerator, cut a small corner of the piping bag, attach the piping tip to the bag, and pipe the filling onto the egg whites in a spiral pattern.
Sprinkle a bit of Paprika powder on the surface of the filling, then add the seared pork belly on top and place a small sprig of dill on top to finish.
