How to choose good peanuts
- Good peanuts have uniformly sized kernels, round shape without deformation or curving. Peanuts with a reddish-brown color and shiny appearance will taste better than those with more white shells.
- Press on the peanut kernel; if it feels hard, firm, and dry, it is a good choice.
- Do not buy peanuts with signs of mold, foul smell, or black spots, as these indicate spoiled peanuts that are not usable.

Roasting Peanuts
Prepare a small pan, add peanuts with 1/2 teaspoon of salt, and place it on the stove to roast over low heat. Stir continuously until the peanuts start to crack and turn a dark brown color, then turn off the heat.
Wait for the peanuts to cool down a bit, then shell them and put the nuts into a bowl.
Peel the shallots, wash them clean, and then chop finely.

Grinding Peanuts
Add the shelled peanuts into a blender, along with 1 cup of filtered water (rice bowl). Blend for about 3 – 4 minutes on high speed until the peanuts are smooth and not gritty when eaten.

Cook the peanut dipping sauce
Prepare a small pot, add all the chopped shallots and 1 tablespoon of cooking oil, and sauté until fragrant. Then, add the blended peanut mixture along with 1 cup of filtered water (rice bowl size) into the pot. Stir the mixture well and cook on the stove over medium-low heat.
Season the mixture with: 1 teaspoon of vegetarian seasoning, 3 tablespoons of soy sauce, 1 tablespoon of sugar, 2 tablespoons of apple cider vinegar. Stir the mixture well, and adjust the seasoning according to your family’s taste.
Next, add 1 tablespoon of tapioca starch into a bowl and 1 – 2 tablespoons of water. Stir well, then pour it into the peanut sauce on the stove, stirring continuously until you achieve a thick sauce. Continue cooking on the stove over medium-low heat for 10 – 15 minutes, then turn off the heat.
Note: To prevent the mixture at the bottom of the pot from clumping or burning, you must stir the mixture continuously while cooking. -
Final Product
