How to choose fresh delicious bananas
- You can use other types of bananas such as wax bananas, porcelain bananas,… to prepare dried bananas. However, if possible, using cooked bananas will be tastier, as they yield a product that is much sweeter, richer, and more fragrant.
- You should choose to buy cooked bananas or powdered bananas for this dish because these two types of bananas will make our dish more delicious and appealing than other types.
- When choosing bananas, you should select ripe bananas (not overripe), which feel slightly soft when held, have a few black spots on the peel, but the peel still looks fresh and not wilted to prepare this dish.
- To choose clean, naturally ripe bananas, you should select those that still have the stem, with a bunch that is evenly ripe (though there may be some green fruit). In contrast, overripe bananas will have yellow fruit but with a hard stem and sometimes still slightly green.

Prepare the Bananas
After purchasing, gently peel the bananas with a knife and place them in the basin.
Note: To prevent the bananas from turning dark after drying, be careful to peel them gently to avoid bruising or cracking the bananas. -
Wash the Bananas
First, wash the peeled bananas with clean water.
Next, dissolve 1 tablespoon of salt in 1.5 liters of water in the basin and then soak the bananas for about 3 minutes until the outer white layer of the bananas peels off completely and the bananas gradually turn a beautiful yellow color. Finally, rinse the bananas with clean water and let them drain.
Note: Do not use iodized salt to wash the bananas, as iodized salt has a high salinity that affects the flavor of the dish; you should use other types of salt such as coarse salt or sea salt for washing! -
Drying banana
Next, you place the bananas on a tray and dry them under the sunlight for about 1 day until the outer surface is dry.
Note: To prevent the bananas from turning black and browning, starting from this step, you must not let water come into contact with the bananas anymore. -
Fermenting banana
After drying the bananas, you neatly arrange them in a food container, then cover it and let it ferment at room temperature for 1 night, about 8 hours, until the bananas release juice and turn slightly darker.

Continue drying bananas
After one night of fermenting the bananas, you continue to arrange them on a tray and dry them for another 2 days under the sunlight until the bananas are completely dry.
Tip: For medium-sized bananas, you only need to dry them for 3 days to be usable. If the bananas are larger, you should dry them for another day! -
Final product
The dried bananas will have a very attractive reddish-brown color with a shiny layer of banana syrup around the banana body.
