How to choose fresh and delicious beef

  • You should choose pieces of beef that are bright red, have clear marbling, and the fat is a bright yellow color.
  • When you gently touch the piece of beef, you should feel a moderate softness and good elasticity.
  • Do not buy pieces of meat that have a foul smell, are mushy, have round white spots between the muscle fibers, and have a pale green color, as these indicate the beef has been stored for too long and is no longer usable.

How to Prepare Dried Beef Slices

  • Prepare Ingredients

    For beef, you should choose large pieces of meat with no fat, then wash them clean and dry them. Once the meat is dry, slice the beef into thick, wide pieces, and remember to cut along the grain to ensure the chewiness and enhance the appearance of the meat.

    Lemongrass should be washed, trimmed, cut into small pieces, and then blended in a blender. If you are short on time, you can buy pre-chopped lemongrass at supermarkets like BigC, SatraMart, Coopmart…

    Marinate the beef with chopped lemongrass, 1 tablespoon of curry powder, 1/2 teaspoon of pepper, 1/2 teaspoon of turmeric powder, 1 tablespoon of chili powder, 1 tablespoon of oyster sauce, 1 tablespoon of soy sauce, 1 tablespoon of annatto oil, 1 teaspoon of salt, and 1 teaspoon of sugar.

    Mix well to let the beef absorb the spices, wrap it in plastic wrap, and refrigerate for 6 hours or overnight.
