How to choose fresh ingredients
How to choose fresh white radish
- It is important to note the identifying characteristics of Chinese white radish to avoid purchasing this type: Smooth, fine, and pure white, quite large, with a plump, long body, no leaf stalks, and root hairs.
- It is advisable to buy medium-sized white radishes that taper towards the tail. Radishes with a thick tail often have a bland taste.
- Choose white radishes that still have their stalks and roots intact; opt for those with fresh stalks, as these are freshly harvested radishes.
- Avoid white radishes with rotten stalks while the skin still appears smooth and shiny, as these radishes have been injected with preservatives.
How to choose fresh chicken
- Fresh chicken has a characteristic shiny yellow skin. The outer layer is thin, smooth to the touch, not too bumpy, and has good elasticity.
- The inside of the chicken has a natural pinkish red color, not too pale or too dark. Especially, the chicken should not have any bruises or blood clots. Parts of the chicken that are slightly pale or have turned a darker gray are from chickens that died before being slaughtered.
- If purchasing pre-processed and packaged chicken, carefully check the expiration date and packaging date, and inspect whether the bag’s openings are intact.

How to cook Braised Chicken with White Radish
-
Prepare the ingredients
Peel the white radish, cut off both ends, wash thoroughly with cold water, and slice into thick rounds about 1/2 finger width.
Crush and finely chop the shallots and garlic. Remove any damaged or wilted leaves from the green onions, trim the roots, wash well, and chop finely.
Cut the chicken into bite-sized pieces, wash thoroughly, drain, and place in a bowl.
How to clean chicken properly, without odor: Before cooking, mix vinegar and salt in a ratio of 2 parts salt to 1 part vinegar, then rub it all over the chicken, scrubbing several times before rinsing thoroughly with clean water. This way, the chicken will not smell when cooked.
-
Marinate the chicken
Marinate the chicken with the chopped shallots and garlic, 1/2 tablespoon of fish sauce, 1 teaspoon of seasoning, 1 teaspoon of monosodium glutamate, and 2 teaspoons of sugar. Use chopsticks to mix well so the spices penetrate the meat.
Marinate the chicken for about 30 minutes.
Tip: Depending on your family’s taste, you can adjust the seasoning to your liking.
-
Stew the chicken
Add 1 tablespoon of cooking oil and 1/3 tablespoon of coconut color into the pot and stir well. Then add the marinated chicken into the pot, stir quickly over high heat.
When you see the chicken has firmed up, reduce the heat, add enough water to cover the chicken, and cover the pot to stew over medium heat.
When the stew water in the pot boils vigorously, add the radish, stir to submerge the radish, and continue to cover the pot to simmer over low heat for about 15 minutes.
Use the tip of a chopstick to check if the radish is soft. When the radish is soft and the stew water has reduced to a suitable amount, turn off the heat.
The dish is now complete, serve on a plate, sprinkle a little chopped green onion on top, and decorate with a few chili peppers for a nice look. Let’s enjoy it with your family!
Tip: To make the dish more flavorful, stew the chicken over low heat so it gradually absorbs the seasoning.
