How to Make Oven-Baked Coconut Jam

  • Prepare the Coconut

To make delicious coconut jam, you should use very ripe coconut flesh, with thick meat.

Separate the coconut flesh from the shell, then peel off the thin inner skin from the coconut flesh and wash it thoroughly.

Grate the coconut flesh into short strands, then rinse with water multiple times until the rinse water is clear and no longer cloudy.

  • Soak the sugar

The coconut meat after being washed and drained, place it in a large bowl and add 110g of sugar, then stir well.

Let it sit for 4 – 6 hours for the sugar to dissolve completely.

  • Cook the jam

After the sugar has completely dissolved, with a little water left in the bowl, place a pan on the stove and add the coconut soaked in sugar into the pan.

Heat the pan over medium heat, occasionally stirring to prevent burning at the bottom.

After about 2 minutes of cooking, add vanilla and continue stirring, gradually reducing the heat, and start stirring continuously.

When the sugar clings completely to the coconut strands, turn the heat to the lowest setting, and stir continuously until the sugar crystallizes completely.

  • Drying the coconut

Evenly spread the sautéed coconut onto the baking tray.

Preheat the oven for 5 minutes at 150 degrees Celsius, with both heating elements on, without the fan, to let the oven heat up. Then, place the tray with the coconut in the middle rack and dry for 20 – 25 minutes, until you see the coconut flesh turn a deep yellow color.

During the drying time, occasionally open the oven door and stir the coconut flesh to prevent it from burning.
