- For frozen tuna: Check the expiration date of the fish carefully, and inspect the packaging for any tears or openings. Avoid choosing pieces of fish with thick layers of ice as they may have been stored too long or thawed and refrozen.

Prepare the tuna
To save time, you should buy pre-prepared tuna and ask the seller to cut it into pieces about 1 finger thick. After bringing it home, wash the tuna with diluted salt water and then rinse with clean water 2 – 3 times. Let it drain.

Prepare the ingredients
For convenience, you should buy pre-peeled pineapple, and when you get home, just clean the eyes, rinse with clean water. Then let it drain and cut into thin slices.
Wash the tomatoes and cucumbers thoroughly, remove the stems, and then slice them thinly to a suitable size.
For the accompanying vegetables, discard any damaged or rotten parts. Soak the vegetables in diluted salt water for about 10 – 15 minutes, then rinse with clean water 2 – 3 times and let them drain.
Peel the garlic, remove the stems from the chili, and then pound them in a mortar until crushed.
For fresh noodles, to enhance taste and safety, after purchasing, briefly blanch the noodles in boiling water. Next, rinse with clean water and let them drain.

Stew the tuna
First, heat the pot on the stove, add 2 tablespoons of cooking oil. When the oil is hot, add all the crushed garlic and chili to sauté until fragrant, then add a little chili powder for a more appealing color. Stir continuously for about 1 minute, when the mixture becomes aromatic, add 1 bowl of cold water and increase the heat.
