How to choose fresh and delicious tuna
- You should choose tuna with clear, sparkling eyes where you can see the pupils inside, and bright red gills.
- When you press on the belly of the fish with your hand, if the flesh is elastic and does not dent, then it is fresh meat.
- Additionally, you can check the flesh of the fish to identify fresh tuna. Fresh tuna will have red flesh; when you hold it and rub it, the flesh remains firm and does not release water.
- Avoid buying tuna with sunken and cloudy eyes, gills that are dark red or brown, and flesh that is yellow and translucent. This indicates that the fish has been frozen and transported for a long time, and the meat will not be sweet anymore.
How to Prepare Braised Tuna with Soy Sauce

Prepare the tuna
To eliminate the fishy smell of the tuna after cleaning, cut the fish into bite-sized pieces, then wash it thoroughly, 2 times with diluted salt water and 1 time with clean water, then let it drain.

Marinate the fish
Add the tuna along with 2 tablespoons of soy sauce and 1/3 tablespoon of monosodium glutamate into a large bowl, then use chopsticks to mix well and marinate for about 15 minutes for the fish to absorb the seasoning.

Fry the fish briefly
Place a pan on the stove, add 2 tablespoons of cooking oil along with 5 slices of ginger, 2 teaspoons of minced garlic, and 2 tablespoons of sliced shallots.
Then sauté until fragrant, then add the marinated tuna and fry for about 3 minutes over medium heat until the fish is firm.

After the fish meat has tightened, add 4 tablespoons of fermented soybeans, 1/2 tablespoon of sugar, and 1/2 tablespoon of seasoning powder, then use chopsticks to stir evenly for about 2 minutes over medium heat to let the spices soak into the fish.
Next, add 100ml of filtered water along with 1 tablespoon of chili powder. Stir well and braise over high heat for about 8 minutes until the water thickens, then turn off the heat, add the chopped green onions, scoop onto a plate, and enjoy.
