How to choose fresh and delicious goby fish
- Choose goby fish that are not too large, medium or slightly smaller sized to make a delicious braised dish.
- Fresh fish will not have a pale color, the flesh is firm and not soft when touched.
- Choose those that have a bright color, clear eyes, and firm skin and body.
- Do not buy goby fish that have a pale color or an unpleasant odor as they may be old and no longer fresh.

How to prepare Braised Goby Fish

Prepare the goby fish
After purchasing the goby fish, put it in a basin, wash it with water mixed with 1 tablespoon of salt and squeeze the juice of 1 lemon into the basin.
Use your hands to gently squeeze the fish for about 5 minutes to effectively remove the slime and fishy smell, then rinse the fish with clean water and let it drain.
Once drained, cut the goby fish in half if it’s large, and leave it whole if it’s small.
How to remove the fishy smell and slime from goby fish
- Besides using lemon and salt to remove the fishy smell, you can also substitute lemon with vinegar and do the same.
- Clean the goby fish with rice water: Soak the goby fish in a basin of rice water, then gently squeeze to remove the slime and dirt, and rinse with clean water.
- Clean the goby fish with flour: Use flour on the fish, then rub off the slime, and rinse with clean water.

Marinate the fish
Put the prepared fish into a bowl, add 1 teaspoon of salt, then mix well, and let it sit for about 20 minutes to absorb the salt.

Prepare other ingredients
Peel and crush the shallots. Crush the garlic, peel it, and chop finely.
Wash the fresh chili, drain it, remove the stem, and crush it.
Trim the roots of the green onions, wash them clean, and cut them into pieces about 1/2 finger length.

Fish Stewing
Place a pot on the stove, add 1 tablespoon of cooking oil into the pot. Wait for the oil to heat up, then add all the minced onion and garlic, sauté until golden and fragrant.
When the onion and garlic are fragrant, add all the pork fat, mix well, then place the prepared fish into the pot.
Gently mix 1 – 2 times so that the fish sits at the bottom of the pot, helping it to cook evenly and preventing the onion and garlic from burning. Then season with 4 tablespoons of fish sauce, 1.5 teaspoons of sugar, and simmer for about 5 minutes.
Continue to add 1 teaspoon of salt, 10 crushed fresh chilies, 3 tablespoons of coloring sauce, 50ml of fresh coconut water, cover and stew on low heat for about 30 minutes until the fish is cooked, absorbed the seasoning, and fragrant.
After 30 minutes, when the fish is cooked, open the lid, add chopped spring onions, 1 teaspoon of pepper, and sliced chilies, taste and adjust the seasoning as needed, turn off the heat, and serve on a plate to enjoy immediately.
