Prepare the Snakehead Fish
Buy the snakehead fish and proceed to scrape off the scales, cut off the gills and tail. Then use a knife to cut it into pieces about 2 finger joints long, removing the internal organs and any blood clots inside.
Finally, rub salt on the fish and wash it with water several times until clean, then let it drain. Next, marinate the fish with 1/2 teaspoon of salt, 1 tablespoon of fish sauce, and 1/2 teaspoon of pepper.
Effective Ways to Remove the Fishy Smell from Snakehead Fish
- The simplest method is to soak the fish in rice water for 15 – 20 minutes to eliminate the fishy smell.
- Another way is to simply use salt to wash or rub it on the fish’s body.
- Additionally, soaking the fish in alcohol or white vinegar for 5 minutes is also very effective in removing the fishy smell.

Peel the ginger you bought, then cut the ginger into thin strips.

Place a pan on the stove and add 1 tablespoon of cooking oil to the pan, then add the fish and fry it briefly for about 2 – 3 minutes over medium heat.
Add about 120ml of water along with 1 tablespoon of fish sauce, 1/2 tablespoon of seasoning, 1/2 tablespoon of monosodium glutamate, 1 tablespoon of caramel sauce, and the sliced ginger, and braise for about 1 hour over low heat. Then adjust the seasoning to taste, turn off the heat, and add a few bird’s eye chilies.
