Ingredients for Ginger Braised Snakehead Fish For 3 people

Snakehead fish 600 gr Ginger 2 pieces Cooking oil 1 tablespoon Bird’s eye chili 2 pieces Fish sauce 2 tablespoons Caramel sauce 1 tablespoon Common spices a little (salt/ sugar/ pepper/ seasoning powder/ monosodium glutamate)

How to choose fresh and delicious snakehead fish

  • Of course, live fish always brings the best flavor. Therefore, you should choose those that are still swimming well, with clear eyes that show the pupils, shiny scales that are uniform.
  • Additionally, press on the flesh to feel the firmness, not soft and mushy, and have good elasticity like rubber.
  • Fresh and delicious snakehead fish should have a cherry color; on the contrary, if it has a dark brown color or is dull, it means the fish has gone bad and should not be chosen.
  • Avoid using fish with swollen bodies, weak swimming, and pale colors.
  • Snakehead fish is freshwater fish, so it will smell like pond water. Avoid choosing those that have a strong fishy smell because that indicates they have been kept for too long and are no longer usable.

How to Prepare Ginger Braised Snakehead Fish

  • Prepare the Snakehead Fish

    Buy the snakehead fish and proceed to scrape off the scales, cut off the gills and tail. Then use a knife to cut it into pieces about 2 finger joints long, removing the internal organs and any blood clots inside.

    Finally, rub salt on the fish and wash it with water several times until clean, then let it drain. Next, marinate the fish with 1/2 teaspoon of salt, 1 tablespoon of fish sauce, and 1/2 teaspoon of pepper.

    Effective Ways to Remove the Fishy Smell from Snakehead Fish

    • The simplest method is to soak the fish in rice water for 15 – 20 minutes to eliminate the fishy smell.
    • Another way is to simply use salt to wash or rub it on the fish’s body.
    • Additionally, soaking the fish in alcohol or white vinegar for 5 minutes is also very effective in removing the fishy smell.
    • Besides, you can use crushed ginger soaked in water with the fish for 5 minutes.
    • Don’t forget to use lemon juice mixed with warm water, then soak the fish for 5 – 7 minutes.

  • Prepare the ginger

    Peel the ginger you bought, then cut the ginger into thin strips.

    Place a pan on the stove and add 1 tablespoon of cooking oil to the pan, then add the fish and fry it briefly for about 2 – 3 minutes over medium heat.

    Add about 120ml of water along with 1 tablespoon of fish sauce, 1/2 tablespoon of seasoning, 1/2 tablespoon of monosodium glutamate, 1 tablespoon of caramel sauce, and the sliced ginger, and braise for about 1 hour over low heat. Then adjust the seasoning to taste, turn off the heat, and add a few bird’s eye chilies.

    Tip

    • When braising the fish, you should not cover the lid but keep it open to let the fishy smell evaporate.
    • Turn down the heat to make the fish tender, preventing the sauce from reducing too much and burning the fish.
    • For braised fish, after cooking, do not leave too much water, as that will reduce the dish’s deliciousness.
