  • To buy good pork belly, you should choose a piece of meat with a balanced amount of lean and fat, the outer skin should be thick, the fat should be about 2/3 of a finger’s length, and the lean meat should be tightly attached to the layer of fat. However, it is important to note that to buy pork belly that is just right to eat and not too tough, you should not choose a piece with an excessively thick layer of fat and skin as this indicates long-raised pigs.
  • Additionally, fresh pork belly will have a dry outer membrane, light red or bright pink color. When cut, the piece of meat should have a bright pink color, with white-pink skin that is soft. The fat interspersed with the lean meat should be bright and firm.
  • Absolutely do not buy pork belly that has an unusual smell or leaves a fingerprint when pressed.

    Add the marinated meat to the pot, turn on the heat, and cook until the sauce boils, then stir the meat. Cook for 2 minutes.

    After that, pour in 1/2 liter of fresh coconut water, cover the pot, wait for the braised pork to boil, then add the salted eggs, keeping them in their shells. Then cover the lid again, and braise on low heat for 30 minutes.

    Regularly turn the meat to ensure it cooks evenly; during this time, you can add quail eggs or salted duck eggs as desired. Cook the meat for an additional 30 minutes.
