Boneless pork belly 1.2 kg (pork belly) Quail eggs 40 eggs Granulated sugar 50 gr Chili 1 piece Shallot 1 bulb Garlic 6 cloves Lemon juice 1/2 fruit Fish sauce 3 teaspoons Coconut color sauce 2 tablespoons Common spices A little (sugar/ salt/ seasoning powder)

How to choose fresh pork

  • Fresh pork will have a dry membrane on the outside, the meat is pink-red and soft, while the fat is opaque white.
  • If you see the meat is dark red or black, you should not buy it as it may be pork raised with lean meat additives.
  • Avoid buying meat that is pale green, darkened, or has red skin.
  • You should choose meat that feels elastic when pressed and not sticky, with a characteristic fresh meat smell.

How to choose fresh quail eggs

  • For fresh quail eggs, you should choose those with slightly rough shells, and there is a white powdery layer on the outside of the eggs. You should not choose smooth eggs that have black spots or mold due to moisture.
  • You can hold both ends of the egg and gently shake it near your ear; if it is a fresh quail egg, it will be very dense and you will not hear any noise when shaking.
  • You should not buy eggs that make noise when shaken lightly due to an air gap inside and the egg being loose.

How to prepare Braised Pork with Quail Eggs

  • Prepare the meat

    To ensure the pork is clean, soak the meat in diluted salt water for about 5 – 10 minutes, then rinse with clean water and let it drain. Next, place the pork in the refrigerator freezer for about 1 – 2 hours so that the pork becomes slightly frozen, making it easier to cut into nice pieces.

    Take the pork out of the refrigerator, use a knife to cut the pork into pieces about 1 – 2 finger widths thick.

    Blanch the pork in boiling water for about 3 – 5 minutes to tighten the meat, then remove and rinse with clean water and let it drain.

    • Method 1: To clean the pork and remove any odor, blanch it in boiling water with 1 – 2 teaspoons of salt, then rinse the meat with cold water before cooking.
    • Method 2: Alternatively, you can blanch the pork in boiling water with a bit of white wine to effectively eliminate any unpleasant smell in the meat.

  • Boiled quail eggs

    When you buy quail eggs, wash them briefly with clean water, then put them into a pot of water and boil for about 4 – 5 minutes, then take them out to cool and proceed to peel the eggs.

    After peeling the quail eggs, mix them with 2 tablespoons of coconut color and let them sit to absorb the seasoning.

    • When boiling eggs in a pot, you should add a little salt.
    • You should put the eggs in a bowl of cold water to make peeling easier.
    • Tap both ends of the egg against the edge of the bowl, as each egg has a small air pocket, then press and roll the egg along the edge of the bowl to crack the shell.
    • When peeling, you should dip the egg in water to make it easier to peel.

  • Marinating the meat

    For 50g of powdered sugar, chop it into small pieces using a knife.

    Chili, shallots, and garlic should be sliced thinly and placed in a mortar with the powdered sugar. Proceed to pound the mixture until smooth.

    Put the prepared pork into a bowl along with the pounded mixture. Next, add 1 tablespoon of sugar, 1 tablespoon of seasoning, 1 tablespoon of salt, and the juice of 1/2 a lemon.

    Mix the ingredients well and let them sit for about 10 – 15 minutes for the pork to absorb the seasoning.

  • Stir-fry the meat

    Place a pan on the stove, add 1 tablespoon of sugar to the pan to caramelize until the sugar turns golden brown, then add the marinated pork.

    Continuously stir until the meat is firm and the surface of the meat turns dark yellow and fragrant, then add 1.5 liters of boiling water to the pan, simmer the mixture for about 5 minutes until the seasoning is no longer sticking to the pan, then transfer the mixture to the rice cooker.

  • Stew the meat with the rice cooker

    Add the stir-fried pork mixture to the pot along with the boiled quail eggs and simmer for 30 minutes.

    After 30 minutes, remove the pork and quail eggs, use a sieve to filter out the chili, garlic, and shallots remaining in the broth.

    Add the pork and quail eggs back into the rice cooker along with the filtered broth, and continue to simmer the meat for another 30 minutes.

    Season to taste and enjoy.
