How to choose fresh ingredients
How to choose fresh pork belly
- You should choose pork that is bright pink or light red, with the fat layer being bright white, and the outer surface should be dry.
- You should pay attention to select pieces of pork that have a balanced ratio of fat and lean meat, which helps the meat to be flavorful when braised without being greasy.
- Choose pieces of pork that feel firm when held, with the meat tightly adhering to the fat. If you press gently and feel the meat is elastic, it is still fresh.
- Do not choose pieces of meat that have a strange smell, are slimy to the touch, or show signs of being soaked in chemicals.
How to choose and buy delicious yam bean
- Shape: Choose yam beans that are evenly shaped, with smooth, thin skin and small stems, as these will have sweeter, fresher, and more watery flesh. Avoid selecting those with rough skin because they tend to be fibrous, dry, and less sweet.
- Color: Good yam beans will have green stems and the skin will be off-white.
