How to choose fresh Korean radish

  • Choose good Korean radish that is firm and heavy, with bright skin and no veins.
  • Korean radish is shorter and rounder than regular radish, with the skin near the stem having a light green color and a slightly pungent flavor.
  • Choose radishes that are firm, crunchy, and not soft or mushy.
  • Avoid purchasing radishes that are bruised, cracked, rotten, or of unclear origin.
Note:If you cannot find Korean radish, you can substitute it with Vietnamese radish to prepare the dish.

How to choose delicious dried shrimp

  • Choose dried shrimp that have a natural orange color or slightly yellowish, with a natural smell.
  • When touched, they feel firm, have a certain dryness, and are not damp.
  • Do not choose dried shrimp with unusually bright colors, showing black or white spots, having strange smells, and being moldy.

How to choose delicious onions

  • It is advisable to choose round onions with long roots; these are good onions. Do not choose those with unusual shapes or completely missing roots, as they will not be tasty.
  • Delicious onions will have firm, smooth skin, a beautiful yellow color, with no black spots, and tightly hugging the bulb.

How to prepare Korean style braised radish

  • Prepare the ingredients

    First, for the radish, peel and wash it clean. Next, cut the radish into pieces about the thickness of a finger joint.

    Green onions should be washed and cut into pieces as long as a finger. The onion should be peeled and cut into wedges.

    Seaweed is cut into 3 small pieces, each piece about the length of a finger. Peel the garlic and wash it clean.

    Dried shrimp should be rinsed and drained.

    To make the seasoning for the radish stew, mix 1/2 teaspoon of chili powder, 1/2 teaspoon of Korean chili sauce, and 2 teaspoons of soy sauce together.

  • Stewed Radish

    You put radish, dried shrimp, green onions, seaweed, and garlic into the pot.

    Next, you add 1 tablespoon of water into the seasoning bowl, stir well, and pour the seasoning bowl into the pot.

    Then, you add 500ml of water to the pot and cover it to stew until the radish is cooked and turns translucent.

    When the radish is cooked, you add onion and stew on low heat until the water reduces. As the water decreases, you add 2 teaspoons of corn syrup and 1 teaspoon of sesame oil, then turn off the heat.
