Pork 400 gr (belly or shoulder) Fermented rice 2 tablespoons Galanga 1 root (chopped or minced) Lemongrass 2 stalks Garlic 2 cloves (minced) Coconut color 1 teaspoon Shrimp paste 1 tablespoon Scallions A little (cut into finger-length pieces) Shallots 2 bulbs (minced) Cooking oil A little Common spices A little (seasoning powder/ sugar/ ground pepper)

  • Prioritize choosing pieces of meat that are bright pink, not too red or too pale.
  • Choose pork that is firm and has high elasticity. You can check by pressing your finger into the meat; if it bounces back immediately, has no stickiness, and does not leak water or juices, it is good quality meat.
  • Avoid buying meat that has unusual colors, a greenish tint, dark-colored fat, is mushy, slimy, or has an unpleasant odor, as this indicates the meat has been stored for too long and is spoiled.

How to Cook Pork Braised with Turmeric Fermented Rice

  • Prepare Ingredients

    First, strain the fermented rice through a strainer until smooth. Next, wash the pork, cut it into bite-sized pieces, and place it in a bowl.

    Then, add to the bowl: fermented rice, 1 tablespoon of shrimp paste, 1/2 tablespoon of seasoning powder, 1 tablespoon of sugar, a little ground pepper, and 1 teaspoon of coconut color.

    Mix the meat mixture well and marinate in the refrigerator refrigerator for about 15 minutes to absorb the flavors.
