  • To buy good pork belly, you should choose a piece of meat with a balanced amount of lean and fat.
  • You should choose a piece of meat with a layer of fat about 2/3 the length of your finger, with the lean meat tightly attached to the layer of fat. However, you should note that to buy pork belly that is just right to eat, not too chewy, you should not choose a piece with an overly thick layer of fat and skin because that indicates a pig that has been raised for a long time.
  • In addition, fresh pork belly will have a dry outer membrane, light red or bright pink color. When cut, the piece of meat has a bright pink color, white-pink skin, and is soft. The layer of fat interspersed with lean meat has a bright, firm color.
  • Absolutely do not buy pork belly that has an unusual smell or leaves fingerprints when pressed, or shows sliminess on the surface of the meat.

How to choose fresh sour plum

  • You should choose ripe sour plums that are slightly wrinkled, with a fresh green color and thick flesh, not bruised or damaged, or overripe sour plums as they have very little flesh.
  • You should not choose immature sour plums with a shiny skin, or those that are bruised, showing signs of spoilage.

    Wash the pork you bought with water, then use 1 tablespoon of salt to rub the outside of the meat, then rinse thoroughly with water 2 – 3 times and let it drain.

    Next, blanch the piece of meat in boiling water for about 2 – 3 minutes, then take the meat out, cut it into bite-sized pieces, and place it in a bowl.

    Marinate the meat with 2 tablespoons of oyster sauce, 2 tablespoons of fish sauce, 1/4 teaspoon of pepper, mix well and let the meat marinate for 10 minutes.

    • To eliminate the odor of pork, before cooking, blanch the pork in boiling water for about 3 minutes along with 1 smashed purple onion, as the onion will help eliminate the smell very well.
    • Additionally, white wine is very effective in removing the smell of meat. You just need to add a little white wine to the boiling water before taking the meat out.
    • After that, wash the meat again with cold water and then continue to prepare it; the meat will no longer have a smell, and dishes made from pork will be more fragrant.

  • Cook the sugar water

    Add 2 tablespoons of sugar into a pan, place the pan on the stove on medium heat until the sugar melts and turns a golden brown color.

    Next, reduce the heat and add 200ml of water into the pan, stir gently, bring the water to a boil, then turn off the heat.

    Place a pot on the stove and turn on medium heat, then add the marinated pork and stir well for 5 minutes until the meat is firm.

    Next, pour in the sugar water, add a little filtered water until it covers the meat, then add a bit of cinnamon bark and 2 star anise, cover and cook the pork on low heat for about 20 minutes.

    When the sauce has reduced by half, open the lid and add the sour fruit, cover again, and continue to cook on low heat for another 15 minutes until the sauce reduces again, then turn off the heat.
