Pork belly 200 gr Garlic 2 cloves Shallots 1 bulb Green onions 3 stalks Coconut caramel 1 tablespoon Cooking oil 2 teaspoons Fish sauce 1.5 tablespoons Common spices a little (pepper/ sugar/ salt/ seasoning powder/ monosodium glutamate)

How to choose fresh and delicious pork belly

  • Choose pieces of meat that are dry, not slimy, have a bright red color, have a characteristic meat smell, and the meat fibers should be uniform.
  • Use your hand to press into the meat, creating a dent but leaving no mark when you lift your finger, indicating that the meat is firm with high elasticity, so it should be purchased.
  • Avoid buying meat with yellow fat or with nodules on the meat fibers as this could be from pigs with pigmentation disease or pork infected with cysticercosis, which is affected by parasites.
  • For pieces of pork with bruises, strange smells, or lacking elasticity when pressed, you should also avoid buying as these are pieces of pork that have gone bad and do not guarantee quality.

  • Prepare the ingredients

    Wash the pork thigh with salt water. Then cut into bite-sized pieces and let it drain.

    Peel the shallots and garlic, then chop them finely.

    Wash the green onions with water, let them drain, and chop them small.

    • To remove the smell from the pork, you should blanch the meat in boiling water for about 3 minutes, then rinse the meat with cold water before cooking.

  • Cook the meat

    Place a pan on the stove, add the marinated meat to the pan and stir-fry until the meat is firm and fragrant. Next, add a quantity of water equal to 1/4 cup of water (rice bowl) and braise until the water in the pan thickens. Season to taste, then add chopped green onions and pepper, and turn off the heat.
