Pork 1 kg Garlic 1 bulb (minced) Chili sauce 1.5 tablespoons Tomato sauce 1.5 tablespoons Rice vinegar 3 tablespoons Cornstarch 2 tablespoons Cooking oil 5 tablespoons Fish sauce 3 tablespoons Common seasoning a little (Salt/ sugar/ seasoning powder/ pepper)

How to prepare Sweet and Sour Stir-fried Pork

  • Prepare and Marinate the Pork

    Wash the pork with diluted salt water, then rinse with clean water, let it drain, and cut into square pieces about the thickness of a finger.

    Marinate the pork with 1/2 tablespoon of seasoning, 1 teaspoon of pepper, stir well with a spoon and let it marinate for 15 minutes.

    How to clean pork properly, without odor:
    • Method 1: Soak the pork in salt water for 5 – 10 minutes to allow impurities in the meat to gradually release.
    • Method 2: You can use salt or lemon juice to rub on the meat, then rinse with clean water and let it drain.
    • Method 3: Use crushed ginger mixed with alcohol in appropriate proportions, rub the meat thoroughly, then rinse well with water.

  • Make the Sauce

    In a bowl, add 3 tablespoons of fish sauce, 3 tablespoons of vinegar, 3 tablespoons of sugar, 1.5 tablespoons of chili sauce, 1.5 tablespoons of ketchup, and half of the minced garlic.

    Stir well with a spoon to dissolve the seasonings.

  • Coat with flour and fry the pork

    The marinated pork has absorbed the seasoning, add 2 tablespoons of cornstarch to the meat and mix well.

    Put a pan on the stove, turn on medium heat, add 5 tablespoons of cooking oil, wait for the oil to heat up, then add the pork to fry for about 15 minutes on medium heat until both sides are golden brown, remove and drain the oil, turn off the heat.

  • Stir-fried pork with sauce

    Reuse the pan used for frying the meat, leaving about 1 tablespoon of oil in the pan, turn on medium heat, and when the oil is hot, sauté the remaining minced garlic until fragrant.

    When the garlic is fragrant, add the sauce and let it boil for about 5 minutes, then add the fried meat, continue to stir-fry for another 5 – 7 minutes until the sauce thickens, adjust the seasoning to taste, add ground pepper, and turn off the heat.

    Tip:
    • If you don’t like vinegar, you can substitute it with tamarind juice or lemon juice.
    • If using lemon juice, do not add it to the sauce immediately; wait until the sauce has thickened before adding the lemon to avoid bitterness.

  • Making sweet and sour stir-fried pork
