  • For pork, choose pieces that are light pink, fresh, with firm skin and a moderate layer of fat, not too thick.
  • Choose the meat that, when pressed, does not feel soft and mushy, has a certain elasticity, and has a characteristic aroma.
  • Avoid buying pieces with bruises, dark colors, overly thick and hard skin and fat layers.
  • Do not choose soft, mushy meat with an unusual odor, as it may have been kept too long or is from old pigs, not fresh.

  • Select plums that are large, round, and have smooth, shiny skin that is red or purplish-red. Additionally, choose plums with a layer of white powder on the skin, as this indicates they are freshly picked.
  • You can gently press the plum with your fingers; if it gives slightly, it will have a very delicious sweet taste. Conversely, if the plum is still hard, it will taste very sour and astringent. However, you should also avoid choosing plums that are too soft or have signs of mushiness.
  • You should buy plums in the right season, around mid-May to late June, as this will be the easiest time to select fresh and delicious plums at reasonable prices.
  • Avoid selecting plums that are green or half red and half green, as these are unripe and will taste sour.
  • Do not choose plums that are bruised, have dark spots, or are leaking juice.

How to prepare Spicy Sour Plum Pork Jerky

  • Preprocessing and marinating the meat

    Wash the meat, slice it along the grain into pieces about 1 finger thick.

    Add all the chopped shallots, garlic, lemongrass, and the spices: 2 tablespoons of oyster sauce, 2 tablespoons of annatto oil, 2 tablespoons of five-spice powder, 2 tablespoons of chili powder, and 1.5 tablespoons of brown sugar into the bowl of meat.

    Mix the meat well with the spices, wrap it in plastic wrap, and marinate in the refrigerator for at least 4 hours or overnight.

  • Boil the meat until cooked

    After marinating, place all the meat into the pot.

    Note: Keep the marinade and the minced shallots and garlic to use for seasoning the meat when shredding!

    Next, pour about 1 cup of clean water into the pot with the meat. Bring the meat to a boil, then reduce the heat and continue cooking for another 15 minutes to keep the meat tender without drying it out. Remove the meat and let it cool before shredding.

    Tip: Keep the broth from boiling the meat to add when stir-frying the dried pork later.

  • Shred and marinate the meat

    When the meat has cooled down, shred it along the grain, you can shred it to your preferred size. Then, add the previously prepared marinade to the shredded meat and marinate for another 10 minutes.

  • Dry the pork

    Heat a pan and add the shredded meat along with the reserved broth, stir-frying over high heat until the liquid is absorbed by the meat, and season to taste.

    Small tip: To make the dried pork tastier and more colorful, you can add 1 tablespoon of fish sauce for more flavor and 3 tablespoons of annatto oil.

    Stir patiently until the meat is dry and no water remains in the pan, stir for another 5 minutes before turning off the heat.

    Put the meat in the microwave for 1.5 minutes to dry it out, and it’s ready to eat right away.

  • Mix dried pork with plums

    Wash the Northern plums, remove the seeds, and cut them into bite-sized pieces.

    Put a little dried pork into a lidded container, add plums, 1 teaspoon of sugar, close the lid, and shake gently a few times to complete!
