  • You should choose mackerel with bright red gills, clear eyes, and tight mouths.
  • Press the fish’s flesh with your hand; if it has good elasticity and is not mushy, the fish is still fresh and can be purchased.
  • You can also choose fish whose scales are still firmly attached to the body, shiny, and without a foul smell.
  • You should not choose fish with cloudy eyes, mushy bodies, and dark red gills, as they are spoiled, and the fish no longer has a fresh flavor.

  • Prepare the mackerel

    After purchasing the mackerel, use a knife to remove the scales, discard the gills and internal organs. Then rub it with salt and wash it thoroughly with water.

    Effective ways to eliminate the fishy smell of mackerel

    • You should soak the mackerel in rice water for about 15 – 20 minutes, then take it out, rinse it with water, and proceed with cooking.
    • You can also soak the fish in water with a little crushed ginger for about 5 minutes, then take it out, wash it clean, and let it drain.
    • Alternatively, you can soak the fish in a mixture of salt and alcohol for about 10 minutes, then take it out, wash it clean, and let it drain.

    Peeled shallots, wash thoroughly, then slice thinly. Wash the chili peppers and let them drain.

    Cut the roots off the green onions, wash them thoroughly, then separate the root part and cut the green onion leaves into pieces about 1/2 finger length.

  • Fish Stew

    Place a pan on the stove, add 1 tablespoon of cooking oil to the pan, then add the sliced shallots and mix well. Next, add 5 tablespoons of fish sauce to the pan along with 50ml of water and 1 tablespoon of caramel sauce, 2 tablespoons of sugar, cook until boiling, then turn off the heat.

    Add the fish to the pan and continue to turn on the heat on low so the fish absorbs the spices, add chilies and stew until the sauce thickens. After that, add the shallot roots, and when the shallot roots are cooked, add the chopped green onion on top of the fish and turn off the heat.

    The mackerel stew is salty, combined with a bit of sweetness and richness, along with the spicy flavor of chilies creating a wonderful dish.
