How to Cook Fish Sauce Stew with Fermented Shrimp Paste

  • Prepare the Basa Fish

    To remove the fishy smell from the basa fish, you need to wash it thoroughly and remove all the blood remaining on the fish slices, then rinse it again with saltwater and clean water several times before cooking.

  • Prepare the other ingredients

    Shrimp bought to eliminate the fishy smell should be soaked in diluted salt water for about 8 minutes after cutting off the head and whiskers, then remove the shrimp and let it drain.

    Pork belly should be rubbed with salt until the salt completely dissolves, then rinse twice with water, and lift out, cutting into thin slices for easy eating.

    Straw mushrooms should have their stems and bruised parts removed, washed clean, and soaked in diluted salt water for about 30 minutes to make the mushrooms clean, white, and reduce their odor, then rinsed again with clean water and cut in half.

    Lemongrass should be washed clean, cut into sections, and crushed. Eggplant should be washed clean, cut into bite-sized pieces, soaked in diluted salt water for about 5 minutes, and then removed to drain. Shallots and garlic should be peeled and crushed.

    Add 3 spoons of fermented fish sauce into a bowl of coconut water, stir well, and then use a strainer to filter out the residue from the sauce.

  • Frying Fish

    Pour 50ml of cooking oil into the pan, wait until the oil is hot, then add the catfish and fry over medium heat for 2 minutes on each side until the fish is firm and golden brown on both sides.

    Add 1 tablespoon of cooking oil (using the oil left from frying the fish) along with crushed garlic and shallots into the pot, sauté until the garlic is fragrant, then add the crushed lemongrass. Cook over medium heat for about 5 minutes until the fish sauce boils, then add straw mushrooms, eggplant, and 1 cup of water. Cook for another 4 minutes until the straw mushrooms and eggplant are evenly cooked.

    Finally, add the fish, stir well, and continue cooking for another 3 – 4 minutes, adjusting the seasoning to taste before turning off the stove.

    Tip: To prevent the fish from breaking, remember to stir gently when adding the fish!
