- Avoid choosing dried squid that has overly bright colors, has a foul smell, or strange odors.

- Choose carrots with a dark orange skin, smooth and shiny.

How to prepare Stir-fried Dried Squid with Vermicelli

Grill and tear the dried squid
Prepare a hot charcoal stove, grill the dried squid evenly on both sides over the charcoal.
Use a pestle to pound the dried squid until soft and remove the burnt parts. Wait for the squid to cool slightly, then tear it into small strips for eating.

Prepare other ingredients
Peel the purchased carrot, wash it clean, and shred it.
Remove the damaged parts from the celery and mustard greens, then wash them clean. Cut the mustard greens into pieces about 3 finger lengths, and chop the celery into bite-sized pieces.
Finely chop 4 cloves of garlic and 3 chili peppers.

Frying and Stir-frying Dried Squid
Place a pan on the stove, add 10 tablespoons of cooking oil. When the oil is hot, add the torn dried squid and stir-fry on low heat for about 5 minutes, then remove the squid and place it in a sieve to drain the oil.
Add 2 tablespoons of cooking oil to the pan, add 1/2 of the minced garlic and all of the minced chili, and stir-fry until the garlic turns slightly golden, then add the fried dried squid.
Stir-fry the squid for about 5 – 10 minutes until it is crispy, then turn off the heat.

Stir-frying Vegetables
Place a pan on the stove with 2 tablespoons of cooking oil. When the oil is hot, add the remaining minced garlic and sauté until the garlic turns golden.
Next, add the julienned carrots to the pan and stir-fry for about 5 minutes, then add the cabbage.
Season with 2 tablespoons of oyster sauce, 1 teaspoon of sugar, 1 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, and 1/2 teaspoon of salt, and stir for about 3 minutes before adding the celery to stir-fry as well.
Then sprinkle an additional 1/2 teaspoon of ground pepper into the pan.

Completion
Place a pot of water on the stove and bring it to a boil, then add 3 tablespoons of cooking oil.
Next, add the glass noodles and boil for 2 – 3 minutes until they are cooked evenly, soft, and translucent, then remove and place in a bowl.
Add the stir-fried squid and vegetables into the bowl of noodles and mix well to complete!
