Choosing delicious dried shrimp
- Fresh and delicious dried shrimp will have a naturally bright orange-red color, be firm, have a solid texture, and not have a strong smell because they are sun-dried.
- You should not buy dried shrimp that are light red or dark red, soft, and have an unpleasant smell as they may have been stored for a long time or treated with food coloring.

Prepare the ingredients
Bitter melon is washed, cut in half lengthwise, and the seeds are removed. Next, cut it diagonally into slices about 1/3 of a finger thick. Then marinate with a little seasoning to reduce the bitterness and make it crunchier when mixed.
Tip: You can use regular bitter melon as well!
Onion is peeled, washed, and cut into wedges.
Carrot is sliced and then cut into thin strips. Mix with the sliced onion. Add 2 tablespoons of vinegar to marinate and mix well to eliminate the pungent smell of the onion.
Chili and herbs are washed and chopped finely. For chili, remove the seeds to reduce spiciness.

Make the dressing for the salad
Add 2 tablespoons of sugar, 1.5 tablespoons of fish sauce, 4 – 5 tablespoons of water, and 2 tablespoons of lemon juice (you can adjust according to your taste), and add the minced garlic and chopped chili. Finally, mix well until the sugar dissolves completely.

Boil the meat and stir-fry the dried shrimp
Wash the meat thoroughly, then boil it in a pot of water for 25 – 30 minutes until cooked.
Slice the boiled meat into thin pieces, and add a little seasoning for more flavor.
For the dried shrimp, soak them in hot water for 15 minutes until they soften. Once they are soft, drain the water and marinate the shrimp with a little seasoning.
Put a pan on the stove, when the pan is hot, add 2 teaspoons of cooking oil and minced shallots, sauté until fragrant, then add the marinated dried shrimp and stir-fry until they turn golden brown, then turn off the heat.

Mix the salad
Drain all the liquid released from the bitter melon, onion, and carrot.
Combine the bitter melon, carrot, and onion together, then add all the marinated meat and stir-fried dried shrimp.
Next, add all the chopped herbs and the dressing, and mix well. You can adjust the seasoning to suit your taste!
Finally, serve the salad on a plate, sprinkle roasted peanuts on top, and enjoy.
