How to choose fresh chicken breast

How to prepare dried chicken using a microwave

Prepare the marinating spices
First, peel and wash the garlic, then crush and chop it finely. Wash the lemongrass, then slice it a little thicker. For the chili, wash it thoroughly and chop it finely. The amount of chili and garlic can be adjusted according to your family’s taste.
Next, wash the lime leaves; you can cut them in half or thirds or keep them whole for drying.

Prepare and boil the chicken
The chicken breast you bought should be washed with diluted salt water to remove impurities from the breast. Next, peel 4 shallots, wash them thoroughly, and slice them thinly.
Then, place a pot of water on the stove to boil the chicken, adding the sliced shallots, 2 teaspoons of salt, 1/2 teaspoon of ground pepper along with the chicken breast into the pot.
Boil the chicken over medium heat; when the water boils, skim off the foam. After about 3 minutes of boiling, your chicken breast is cooked; remove the chicken breast and immediately place it in a bowl of ice-cold water to keep the chicken breast tender and not dry.
Next, shred the chicken breast into bite-sized pieces. Don’t shred it too thin as it may break apart when drying.

Make the marinade sauce
Place the pan on the stove, add a little cooking oil to the pan. When the oil is hot, add the minced garlic and chili from above and stir until the garlic is fragrant and golden, then add 2 teaspoons of chili powder, 2 tablespoons of fish sauce, 100ml of chicken broth, 2 tablespoons of honey, and 1 teaspoon of salt. Stir the mixture well to combine.

Stir-fry the chicken
When the sauce mixture is boiling, add the shredded chicken to the pan and stir well so that the seasoning absorbs into the chicken breast. Once the seasoning is evenly coated on the chicken, add the lime leaves, 4 chilies, and chopped lemongrass to the pan. Use chopsticks to stir and fry the chicken for about 2 – 3 minutes, then turn off the heat.

Drying Chicken
Next, place the chicken in the drying tray lined with aluminum foil (or wrap it in aluminum foil), then spread the chicken breast evenly in the tray. Then, dry the chicken in the microwave with a grilling function for 50 – 60 minutes at 110 degrees Celsius.
After drying, take the chicken breast out, stir a few times, and let it cool before storing.

Final Product
