  • Fresh pork usually has a dry surface, when pressed with the hand, it feels elastic and has the characteristic aroma of meat.
  • Avoid choosing pieces of meat that are dark or pale in color, with the fat and meat separated, poor firmness, and when pressed, liquid oozes out with an unpleasant odor. This could be meat that has been stored for a long time or injected with chemicals.

  • You should select figs that are of moderate size, not too large as they may be overripe, and not too small as they may be too immature and won’t taste good when cooked.

  • Prepare the ingredients

    Wash the figs thoroughly and briefly boil them in boiling water for about 2 minutes, then remove and let them cool. After that, peel off the outer skin and cut into wedges.

    Wash the pork with water and cut it into bite-sized pieces. Wash the green onions, chop the leaves and the white parts.

  • Marinate the meat

    Put the sliced pork into a bowl and marinate with 1/2 teaspoon of salt, 1 tablespoon of fish sauce, 1 teaspoon of seasoning powder, and a little thinly sliced shallots. Marinate the pork for about 20 minutes to allow the meat to absorb the seasoning evenly.

  • Cook the braised pork with vả

    Put 1 tablespoon of cooking oil into a pot, when the oil is hot, add the pork and stir-fry for about 2 minutes, then season with 1 teaspoon of ground pepper and stir well to let the meat absorb the seasoning.

    Next, add about 500ml of filtered water to the pot and braise the meat for about 15 minutes over medium heat until the meat is tender. Then, add the vả and cook for about 7 – 10 more minutes.

    When the vả and meat are both tender, add 1 teaspoon of salt, 1 teaspoon of seasoning powder, 1 teaspoon of monosodium glutamate, and adjust the seasoning to taste. Finally, turn off the stove, scoop into a bowl, and sprinkle with green onions to complete the dish.

    Tip for stir-frying meat without drying it out: When stir-frying meat, you should not add salt; just marinate with a little oyster sauce or light soy sauce and wine to help the meat not dry out during cooking and taste better.
