  • When buying pork belly, you should choose pieces that are bright pink in color with a balanced ratio of fat and lean meat, so that it is not too dry from too much lean or too greasy from too much fat.
  • In addition, good pork belly will have good elasticity with the characteristic smell of fresh meat. The fat and skin are tightly attached to each other.
  • Avoid buying pieces of meat that have pale colors with strange odors and ooze water when touched, as these are meats that have been kept for too long and are no longer fresh.

How to prepare Braised Pork with Potatoes

  • Prepare the ingredients

    When you buy potatoes, rinse them briefly with water to remove any dirt (if any), then use a knife to peel the skin and cut the potatoes horizontally into slices about 1/3 of a finger thick.

    Next, soak each sliced potato in a bowl of cold water for about 2 minutes, then take them out, rinse with water, and let them drain.

    For garlic and shallots, simply peel them and crush them.

    After washing the bell pepper, remove the seeds inside and cut the flesh into small pieces.

    Wash the green onions, remove the roots, and cut them into pieces about 1.5 fingers long.

    To eliminate the unpleasant smell, rub salt evenly around the pork belly, then rinse with water and cut it into pencil-shaped pieces.

    After draining the potatoes, place them in the air fryer with a layer of paper towels underneath, set the temperature to about 140 degrees Celsius, and time for 8 minutes until the potatoes are slightly browned on the edges, then transfer them to a plate.

    Next, place a non-stick pan on the stove, then add the pork belly and fry evenly on low heat for about 3 minutes until the meat is browned on the edges and some fat has rendered out, then turn off the heat.

  • Braised Pork with Potatoes

    After frying the pork until it is browned on the edges, remove the meat and discard some of the fat, leaving about a tablespoon in the pan. Then add chopped shallots and garlic, stir until fragrant.

    Add the pork back in and stir well, then add the potatoes and mix evenly. Next, add 50ml of soy sauce and chopped bell peppers, stir for about 1 minute over medium heat, then add 150ml of water.

    Next, braise the pork over low heat for about 10 minutes, until the liquid thickens. Adjust the seasoning to taste and then turn off the heat.

    Finally, add chopped green onions and crushed black pepper, stir well, and serve on a plate.
