  • Prepare the pork

    For pork ribs, use a knife to cut them into pieces about 10cm long, then soak them in diluted salt water for 30 minutes to remove impurities.

    Next, put the ribs in a pot, add water and boil for 30 minutes, then add shallots for fragrance. After that, use a ladle to take the ribs out and place them in a basket to drain.

    • Remove the smell by blanching in boiling water: After cleaning, put the ribs and water in the pot so that the water just covers the ribs. Then, boil for about 2 – 3 minutes, then take the ribs out and rinse with water.
    • Remove the smell by soaking in salt water: Just soak the cleaned ribs in diluted salt water for about 10 – 15 minutes, then rinse with water. You can add a few crushed ginger slices and a few drops of white wine to the salt water.
    • Remove the smell with dried onion, ginger, lemongrass, white wine, vinegar: Just add one of the above ingredients to the boiling water, then blanch the ribs in this water for about 2 – 3 minutes.

    Kimchi should be halved and then cut into bite-sized pieces.

    For shallots, peel them completely, then slice thinly; wash the green onions and chili peppers, and cut them into pieces.

    First, place a pot on the induction cooker, then add kimchi, ribs, 750ml of filtered water, and shallots to the pot and simmer over medium heat for 20 minutes.

    Next, add 1 teaspoon of seasoning, 1 tablespoon of fish sauce, 1/2 teaspoon of sugar, and 1/4 teaspoon of monosodium glutamate to the pot.

    Continue to cook for about 30 minutes until the liquid has reduced and the ribs are tender.

    When the ribs are tender, add green onions and chili to the pot.

    Finally, adjust the seasoning to taste, then turn off the heat.
