Fried tofu 2 pieces Pineapple 1/4 fruit Bitter melon 2 fruits Carrot 2 roots White cabbage 2 roots Long beans 50 gr Snap peas 50 gr Okra 5 fruits Straw mushrooms 50 gr Dried shiitake mushrooms 50 gr Green onion a little Chili 2 pieces (red) Lemongrass 2 stalks Chili sauce 1/2 tablespoon Soy sauce 4 tablespoons Caramel sauce 1/2 tablespoon Oyster sauce 2 tablespoons Vegetarian seasoning 2 teaspoons Vegetarian fish sauce 2 teaspoons Roasted pepper 1 teaspoon Cooking oil 3 tablespoons Common seasoning a little (sugar/ salt/ monosodium glutamate/ ground pepper)

  • Shape: Choose fresh, intact vegetables, not bruised or mushy. Avoid buying plump vegetables with unusually large sizes, as these may contain growth hormones.
  • Color: It is advisable to choose vegetables with natural colors that are not wilted or overly dark and abnormal.
  • Smell of vegetables: When purchasing, you should smell the vegetables; if there is any unusual odor, you should not buy them as they may have been treated with chemicals.

  • Preparing vegetables

    First, wash the vegetables thoroughly, peel them, and soak them in salt water to remove dirt, then drain. Cut the carrots into sticks and the white radish into rounds. Cut the green beans, long beans, and okra into small pieces, and slice the bitter melon into bite-sized pieces.

    Finely chop the lemongrass and cut the scallions into small pieces.

    Cut the tofu into bite-sized pieces; you can fry the tofu briefly to make it golden and crispy, which enhances the taste when braised.

  • Make the marinade sauce

    You put into the pot 1/2 teaspoon of salt, 2 teaspoons of vegetarian seasoning, 1/2 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, a little ground pepper, 1 teaspoon of roasted peppercorns, 2 teaspoons of vegetarian fish sauce, 2 chili peppers, 1/2 tablespoon of chili sauce, 2 tablespoons of oyster sauce, 4 tablespoons of soy sauce, and 1/2 teaspoon of caramel sauce. You use a spoon to mix all the ingredients together into a thick mixture.

    You can reduce some ingredients depending on the amount of vegetables you have!

  • Marinate the vegetables

    You put all types of vegetables into the marinade sauce mixture and gently mix them with your hands so that the vegetables absorb the seasoning and marinate for 10 minutes.

    Note: Just mix, do not squeeze to avoid crushing the vegetables.

  • Vegetable Stew

    Next, you place a pan on the stove and add 3 tablespoons of cooking oil and heat it. Then, you add minced lemongrass to sauté until fragrant.

    After that, you add the vegetables and tofu at the same time, keeping the heat at medium, and stir for about 5 minutes so that the sauces soak into the vegetables, making the vegetable stew flavorful and quick to absorb.

    Next, add 1 cup of water (you can use coconut water), remember to reduce the heat to the lowest setting and stew for 15 minutes. Finally, season to taste and turn off the stove, adding a little chopped green onion. If you like it spicy, feel free to add some pepper!

    The vegetarian vegetable stew is complete! You just need to plate it nicely for decoration, and you can enjoy it right away! This dish is extremely attractive, flavorful, and pairs wonderfully with hot rice!

    With the first bite, you will taste the rich flavor of the stew, the vegetables are crunchy and sweet, the slight bitterness of bitter melon, and a hint of spiciness from the chili, making it a rice-consuming dish!
