- Durian spines: Choose fruits with spines that look fresh, green, firm, and widely opened.

How to Make Salted Egg Durian Cake

Mix and Knead the Dough
Put 100g of sugar, 100ml of water, 300g of flour, and 50ml of cooking oil into a bowl and mix well until the mixture is cohesive.
Next, use your hands to knead the dough for about 10 minutes until it is smooth and not sticky. After that, cover the dough tightly and let it rest for 30 minutes.

Prepare salted eggs
Soak the salted eggs in white wine for about 10 minutes to eliminate the fishy smell, then rinse them thoroughly with fresh water.
Next, steam the salted eggs for 20 minutes over medium heat until cooked.

Cook mung beans
Wash the mung beans thoroughly, then soak them for 5 – 6 hours.
Next, put the mung beans in a pot with just enough water to cover them. Cover tightly and cook the mung beans over low heat until soft.

Stir-fry mung bean filling
Heat a pan, add the cooked mung beans, 200ml of coconut milk, durian flesh, and 50g of brown sugar. Stir-fry the mixture over medium heat until the filling is smooth and dry.
Tip: It is advisable to stir continuously to prevent the filling from burning. -
Shaping the cake
Divide the cake dough and mung bean filling into 7 equal parts. Next, flatten the mung bean filling, place the salted egg in the center, and roll it into a ball.
Then, roll out the cake dough thinly, place the filling in the center, fold it in half, and pinch the edges closed with your hands.
Tip: To make the edges of the dough stick tightly together, you can apply a little water. -
Baking the cake
Preheat the oven to 180 degrees Celsius for 15 minutes to stabilize the temperature. Then, put the cake in the oven and bake for 10 minutes at 180 degrees Celsius.
Beat 2 egg yolks, then brush them evenly over the surface of the cake and bake for a second time for an additional 10 minutes.
After 10 minutes, brush egg yolk over the surface of the cake again and continue to bake for a third time for another 15 minutes until cooked.
Tip: Before brushing egg on the cake, you should let the cake cool down a bit before brushing. If the cake is still hot, it can easily cook the egg, causing a grainy appearance on the surface of the cake. -
