How to cook Eggplant stir-fried with tofu and pork

  • Prepare the ingredients

    First, prepare a bowl of clean water and add 1 teaspoon of salt, then stir well until the salt dissolves.

    The eggplant bought should be washed clean, cut off the stem, and use a knife to slice the eggplant diagonally into pieces about 1/2 finger thick, then soak the eggplant in the prepared saltwater for about 5 – 10 minutes before removing it to drain.

    The white tofu should be rinsed briefly with water and then cut into bite-sized cubes.

    The pork should be rubbed with a little salt to reduce the odor, then washed clean and sliced thinly.

    Shallots and garlic should be peeled and minced finely.
