How to make Kaya Jam

Cook traditional Kaya jam
Place a pan on the stove, add water to the pan and wait until it boils, then put a stainless steel basket into the pan so that the water covers the basket by 1 – 2cm; this step helps the boiling water to have a place to escape and not splash out.
Next, place the bowl containing the egg and milk mixture into the basket and cook for about 45 minutes over low heat. While cooking, stir with a whisk every 5 – 10 minutes.
After 45 minutes, the mixture is cooked, remove the pandan leaves and stir for another 15 – 20 minutes until the mixture thickens a little more.
Then, turn off the heat, take the bowl down, and wait for the jam to cool before storing it in jars.

Mix the egg and coconut milk mixture with pandan leaves
Put 150g of white granulated sugar, 2 chicken eggs (crack and add one more egg, discarding the egg white and keeping the yolk in the bowl), and 150ml of coconut milk into a bowl. Use a whisk to mix well until the mixture is combined.
Blend 2 pandan leaves until smooth and filter to get 20ml of pandan leaf extract, then add it to the egg and milk mixture and stir well.

Cook the green Kaya jam
Pour the prepared mixture into a pot, add 2 rolled pandan leaves, then place it on the stove over low heat.
When the mixture heats up and the bubbles on the surface disappear, use a whisk to stir continuously to prevent the eggs from curdling.
After about 15 minutes, the jam will be cooked and thickened, then remove the pot from the heat. Wait for the jam to cool, then put it into a jar for storage.
