How to choose fresh and delicious snakehead fish
- When buying snakehead fish, you should choose those that are still alive, swimming healthily, have bright eyes and a thick body. Because when filleting, it will be quick and the meat will taste sweeter.

Prepare the snakehead fish
To save time and for convenience, you should ask the seller to clean and prepare the snakehead fish. When you get home, you just need to remove the fishy smell by soaking the fish meat in a mixture of diluted salt water for about 5 minutes, then rinse the fish meat twice with water.
Next, use a knife to scrape the fish meat off the snakehead fish, place it in the blender, and blend for about 5 minutes until the mixture becomes chewy and sticky, then stop.

Marinating Fish
First, take 3 sprigs of cilantro, cut off the roots, wash them clean, let them dry, and chop them finely. For the green onions, take 2 stalks, wash them clean, remove the roots, and only use the green parts, cutting them into small pieces.
Then, gradually add the chopped cilantro and green onions along with 1.5 teaspoons of seasoning, a pinch of salt, and 1 tablespoon of pepper into the bowl with the mixed fish.
Next, use a spoon to mix everything well so that the fish and the ingredients blend together, then marinate the fish for about 10 minutes to allow it to absorb the flavors.

Making Scallion Oil
To make scallion oil, first take the remaining 3 green onions, cut off the roots, wash them clean, and chop the green parts into small pieces. Place them in a bowl with 1/2 teaspoon of sugar and 1/3 teaspoon of salt.
Next, heat a pan on the stove, add about 150ml of cooking oil, and heat it over high heat for about 2 minutes until the oil is hot, then turn off the heat and use a spoon to scoop 2 tablespoons of the hot oil into the bowl with the green onions.
Then mix everything well for about 1 minute until the seasonings dissolve completely and the green onions turn a fresh green color and are evenly coated with oil, which is complete.

Frying the fish
Next, you take the pan with oil that was just heated earlier and put it back on the stove, then reheat it over medium heat for about 1 minute until the oil is hot again. Then, using a spatula, scoop a large piece of about 1/4 of the marinated snakehead fish from the bowl into the pan.
After that, immediately flip it over and gently press down on the fish with the spatula to flatten it, then fry on low heat for about 5 minutes until the fish is golden brown. Then, increase the heat to medium and fry for another 2 minutes until the oil has drained from the fish, then remove the fish cake and place it on paper towels.
Tip: To keep the fish cake crispy and not greasy, after frying, place a layer of paper underneath the fish to absorb the excess oil. -

After the fish cake has absorbed all the oil, use a knife to cut it into small, bite-sized pieces.
Next, wash the cucumber thoroughly and cut it into wedges. Peel the carrot, wash it with water, and shred it.
