How to Choose Fresh and Delicious Jujube
- You should choose oval-shaped sour jujube fruits and avoid buying round ones or those with overly pointed ends.
- When buying jujube, you should select the ones larger than your fingertip; do not buy those that are too small as they are immature and can be very bitter when cooked. Also, you should choose fruits that are of uniform size and not bruised.
- Choose fruits with shiny, light green skin, thin skin, thick flesh, a mild sour taste, and slightly bitter. You should not choose those that are too dark or slightly yellowish as they may be wilted jujube.
How to prepare Salt and Chili Mixed Cà Na

Prepare the ingredients
After harvesting or buying cà na, wash it with water to remove dirt, and wash the chili peppers clean, removing the stems.
Put about 1.5 liters of water and 4 tablespoons of salt into a basin and mix well until the salt dissolves in the water.
Next, use a pestle to crush the cà na and then place it into the saltwater basin. Soak the cà na in the saltwater for 20 minutes.
Then, remove the cà na and use your hands to squeeze out some of the saltwater. After that, place the cà na into another basin of clean water to wash. You can squeeze and rinse the cà na with clean water about 2 – 3 times to reduce the saltiness and bitterness. Finally, remove the cà na to a basket to drain the water.

Add 20g of table salt and 4 chili peppers into a bowl, then use a pestle to pound the salt and chili mixture until well combined.

Cooking syrup
Place a pan on the stove, add 400g of sugar and 100ml of clean water into the pan, and use a spoon to stir until the sugar dissolves in the water, then cook the syrup mixture over medium heat.
Once the syrup boils and starts to thicken, turning a slightly amber color, turn off the heat.

Mixing green mango
Transfer the drained green mango into a basin or a large bowl, gradually pour the cooked syrup evenly into the bowl and use a spoon to mix well.
