How to choose fresh chicken eggs
- To buy fresh chicken eggs, when purchasing, you should touch the eggshell; if it feels rough and slightly gritty, then it is a fresh egg.
- Hold the egg close to your ear and shake it gently; if it makes no sound, it is fresh. Conversely, if it makes noise, it is old.
- You should not buy eggs that have cracks on the shell or tiny black spots as those are eggs that have been harvested for a long time and are about to spoil.

How to make Milo Flan

Cook caramel
First, put 100g of granulated sugar into a pot, spreading the sugar evenly across the bottom of the pot.
Place the pot on the stove, adjust to low heat, and cook until the sugar melts. While cooking, remember to continuously stir with a ladle to prevent the sugar from burning!
When the sugar has fully melted and the syrup turns a shiny brown color, add 40ml of water, stir well to dissolve the sugar in the water, and turn off the heat.
Prepare 8 plastic jars, evenly divide the caramel into the jars and set aside to let the caramel thicken and become chewy.
Note when making caramel- You can adjust the amount of sugar and water according to your preference to create either a thin or thick caramel. If you want a thin caramel, add more water and less sugar, and vice versa.
- When cooking caramel, avoid using a pot that is too thin, as it can easily burn the sugar. For better observation of the caramel’s color, choose to cook with lighter-colored pots.
- The cooking time for caramel will vary depending on many factors such as sugar, water, heat settings, etc. Therefore, pay close attention and don’t rush.
- Caramel can easily solidify when cooled, so pour it into molds while it is still hot. If the caramel hardens, simply heat it up again to melt it back down.

Mix the Milo milk mixture
Next, you add 22gr of Milo milk powder into a measuring cup, gradually add 400ml of boiling water, and stir well for the milk to dissolve. Then add 190ml of condensed milk and continue to stir until the milk is completely dissolved.

Mix the Milo flan mixture
Next, you crack 3 chicken eggs into a bowl. Crack 2 more eggs into a separate bowl, separating 2 egg yolks into the bowl.
Use a spoon to gently stir the eggs. Then, gradually pour the prepared Milo milk mixture into the eggs, stirring continuously with the spoon to blend the mixture.
Continue to strain the Milo flan mixture through a sieve for a smoother consistency.

Pour into molds and steam the cake
At this point, you divide the milo flan mixture and pour it into plastic jars that already contain caramel.
Place the jars in the steamer, cover the jars, and proceed to steam the cake. Adjust the heat to low, and when the steamer is hot, start steaming the cake for 35 minutes.
Tips to prevent flan from having holes- To ensure that the flan does not have holes, you can strain the mixture through a sieve multiple times to reduce the amount of air bubbles and egg residue.
- It is advisable to preheat the oven or steamer before placing the cake inside, and maintain a stable temperature during the steaming process.
- When using the water bath method, steam at the lowest heat. If using an oven, set the temperature to 150 – 160 degrees Celsius.
- You should use a two-tier steamer or pot to steam the cake. Before covering the pot, place a cloth or a clean piece of fabric over the pot opening to absorb steam while steaming.
- You can tightly wrap the cake mold with aluminum foil; this will not only prevent temperature changes but also help keep the cake from having holes.
- Place a cloth or a clean piece of fabric under the bottom of the cake mold to reduce the temperature at the bottom of the mold.

Completion
After 35 minutes, you open the lid of the steaming pot, remove the lid of the cake mold, and use a toothpick to poke into the cake. If the toothpick comes out clean and not sticky, then the cake is done.
You take the Milo flan out and let it cool. Prepare some ice, crush it into a bowl, add 300ml of Milo milk, and then add the flan cake to enjoy.
