How to Make Sponge Fried Eggs

  • Separate the Egg Whites

    First, separate the egg whites and egg yolks into two different bowls. Be careful not to let the yolks touch the whites, as this will prevent the whites from whipping up properly.

    Next, add 1/2 tablespoon of salt to the yolks and beat them until well combined.

  • Whip the Egg Whites

    Next, add 1/2 tablespoon of sugar to the egg whites, then use a whisk or electric mixer to whip the mixture until it forms stiff peaks. When you lift the whisk, if the peaks stand up, then the eggs are ready.

    Be careful not to whip too long; once you achieve stiff peaks, you can stop. Over-whipping can cause the whites to separate and lose their fluffiness.

    Place the pan on the stove and turn on low heat. When the pan is hot, add 5g of butter or cooking oil to the pan. Then pour the eggs into the pan, using a spatula to spread the eggs evenly for a nice appearance.

    After that, cover the pan and keep the heat low, it will take about 5 minutes for the eggs to cook.

    After 5 minutes, when the bottom of the eggs is golden, gently fold the eggs like an omelet and hold for 10 seconds.

How to Make Fluffy Eggs

  • Whisking the Eggs

    First, separate the yolks and whites of 2 eggs into 2 different bowls. Next, use a whisk to beat the yolks, adding 1/4 teaspoon of salt to the bowl and stirring until the yolks are smooth.

    For the bowl containing the egg whites, use an electric mixer on a low speed until you see tiny bubbles forming.

    Then, add 1/2 teaspoon of lemon juice to the egg whites and increase the speed, whipping the egg whites for about 2 minutes.

    After that, gradually add 1 teaspoon of sugar and raise the speed to the highest setting, beating for about 5 – 7 minutes.

    After 5 – 7 minutes, gradually lower the speed back to a low setting until the egg whites form stiff peaks.

    Finally, pour the previously beaten yolks into the whipped egg whites and gently fold the mixture together.

    Tip:
    • Make sure to clean all utensils and the bowl for the egg whites thoroughly and dry them well. Even a drop of water or a speck of dust can reduce the fluffiness of the eggs.
    • When mixing the yolks and whites, do not stir or mix too long, as this will break the air bubbles and cause the cake to deflate.

    Place a pan on the stove and turn the heat to low, add 5g of unsalted butter and heat until the butter melts.

    Next, pour the entire mixture of whisked eggs into the pan and spread it evenly over the surface of the pan.

    Then, cover the pan with a lid and keep it on low heat for about 3 – 4 minutes until the eggs are cooked.

    After 3 – 4 minutes, open the lid and fold the eggs over like wrapping a blanket, then flip the egg piece back and forth for about another 1 – 2 minutes to ensure both sides are cooked evenly.

    Finally, when you see the eggs are golden, dry, and fluffy, turn off the heat.
