Pick out the yellowing and wilting chive leaves, wash them thoroughly, and cut them into pieces about 2 finger lengths long.

Use chopsticks to beat the 4 eggs, then season with 1/2 tablespoon of fish sauce and 1 chopped chili, mixing well.
Next, add the chopped chives and stir well.
Note: If you do not like spicy food, you can omit the chili!

Fried Eggs
Put 1 tablespoon of cooking oil into the pan, when the oil is hot, add 1 sliced shallot to fry until fragrant. When the shallot is slightly golden, add the entire mixture of eggs and chives.
Use chopsticks and spoon to spread evenly so that the chives cover the surface of the eggs and fry the eggs on low heat for 3 – 5 minutes until the surface of the eggs hardens.
Then, you temporarily turn off the heat. Transfer the eggs to a flat plate and flip the eggs over, placing the other side of the eggs back into the pan, then turn the heat back on low, frying for another 2 – 3 minutes to finish.
