Prepare Eggs and Butter
First, separate the egg yolks and egg whites into 2 different bowls.
Note: Do not let the yolk touch the bowl of egg whites, as it will not whip the egg whites properly. If there is even a little yolk in the egg white bowl, use an eggshell to scoop it out!Next, place 60g of unsalted butter in a pot and melt it, or you can melt it using a microwave or oven.

Mix Flour and Whip Egg Whites
Put 100g of all-purpose flour, 20g of cornstarch, and 5g of vanilla powder into the bowl and mix well, then sift the flour mixture for smoothness.
Tip: To prevent the cake from becoming dry and to make it fluffier, we must mix the all-purpose flour with cornstarch to reduce the heavy structure of the flour. However, if you are using type 8 flour, you can skip the cornstarch.Add to the bowl the egg yolks along with a mixture of: 60ml of unsweetened fresh milk, 60g of melted butter, and then use a whisk to mix well. Next, gradually add the dry flour mixture into the egg bowl and continue to stir until you achieve a homogeneous mixture.
In a bowl with egg whites, use a mixer at low speed until the eggs form tiny bubbles like soap. Next, divide 100g of sugar into 3 parts, adding each part to the egg bowl and continue to beat the sugar at medium speed.
When the sugar is completely dissolved, increase the mixer speed to high and beat until the egg whites are stiff and form peaks that stand upright without drooping.

Butter Milk Sponge Cake
Move the rack down to the bottom groove of the oven. Preheat the oven at 170 degrees Celsius for 15 minutes with both top and bottom heat combined with a convection fan.
Divide the whipped egg white mixture into 3 portions, then add each portion to the egg yolk mixture.
Using a flat whisk, gently fold the mixture from the bottom up. Bring the whisk down to the bottom of the bowl, push the heavy ingredients up, and flip them to the side (scoop and flip from the bottom up). Continue this process until the mixture becomes smooth.
Note: This is the folding technique in baking, you should fold correctly to avoid breaking large air bubbles, otherwise the cake will be dense and won’t rise.
