How to choose good chicken meat
- Good chicken has fresh-looking meat, no foul smell, and the skin should not have bruises or blood clots.
- Avoid choosing dark-colored chickens as they are likely to have died before processing.
- Press the chicken thigh with your hand to check; if the meat is firm, it’s good chicken.
- If pressing the meat feels mushy, slippery, deformed, or indented as if filled with water, it indicates that the chicken has been injected with water, sometimes mixed with borax; absolutely do not buy.

How to prepare Pepper Roast Chicken

Prepare the chicken
Rinse the chicken thighs briefly and make light cuts with a knife.
Place the chicken in a deep tray/bowl along with minced ginger, rock salt, and white wine. Rub the salt and ginger onto the surface of the chicken to eliminate any odor on both sides of the thighs.
Finally, rinse the chicken thoroughly and let it drain.

Make the seasoning sauce for the chicken
Crush black peppercorns in a mortar but do not grind them too finely.
Mix ketchup, chili sauce, fish sauce, sugar, minced onion and garlic, salt, ground pepper, and annatto oil in a small bowl, combining all the ingredients well.
Pour the pepper sauce over the cleaned and drained chicken, rub the sauce over the meat thoroughly to ensure it is coated on all sides, and marinate for about 30 minutes.

Roast chicken for the first time

Let the chicken rest for about 10 minutes after the first roasting, then place the chicken back into the frying basket, no longer wrapping it in foil.

Roast the chicken for the second time at 180 degrees Celsius for only 5 minutes.
