Tips for choosing good apples
- You should choose apples that are not too big. The apples should be ripe and have a slightly sour taste, choose firm apples rather than soft ones.
- Apples with a mix of yellow and pink color will be crispy, sweet, and slightly sour, very delicious. Do not choose those that are green with a little red; such apples are usually very bland, may have a lot of juice, but definitely not sweet.
- Choose apples that are intact, with no bruises, pests, or signs of spoilage. The stems should still be fresh, not wilted.
- When buying apples, choose those with red stripes and a little bit of yellow mixed in. Such apples are crispy, juicy, and very sweet.

How to make Apples steamed with wine
-
Prepare the apples
Wash the apples and peel them completely. Wash the orange, cut a piece of peel measuring 8x2cm. Cut the orange in half and squeeze out 50 ml of juice.
-
Simmer the wine mixture
Put a medium-sized pot with red wine, filtered water, coconut sugar, fresh orange juice, fresh orange peel, cinnamon stick, and star anise as listed in the ingredients.
Turn on the stove to medium heat and then place the pot on the stove to cook until the water boils, then lower the heat to a very low setting to simmer.
-
Stew apples with wine
Add the apples and stew them with the wine. When stewing, you need to set the heat to the lowest setting. Stew for about 1 hour until the apples are soft and absorb the wine as well as the other flavors.
Tip:
- Cover the pot while stewing the apples with wine.
- Remember to turn the apples so they absorb the wine evenly and achieve a beautiful color and uniform softness.
-
Make the wine sauce
Take the apples out and place them on a plate. Strain the juice from what remains in the pot and continue to cook on medium heat until it reduces, leaving about 1/4-1/3 of the original volume, for about 20-30 minutes.
Cook until the sauce thickens and then remove from the heat to cool.
-
Final Product
Drizzle the wine sauce over the apples and enjoy. The wine after cooking has lost all its alcohol flavor, leaving only the aroma blended with the apples, cinnamon, and star anise, creating a wonderful dessert that is not heavy after the meal.
