How to Choose Fresh and Quality Peanuts

  • When buying peanuts, you should choose large, round, and plump ones that feel firm when pressed. Because these peanuts will have a richer and tastier flavor when eaten.
  • Additionally, you should prioritize buying peanuts with red shells that are bright in color. Because this type of red-shelled peanut will be denser than the white-shelled ones.
  • Do not choose peanuts that are hollow, have signs of weevil infestation, are damp or moldy, or have unusual colors, and have sprouted.

How to Prepare Soaked Peanuts

  • Soak peanuts and peel

    Put 400g of peanuts into a bowl, pour about 200ml of boiling water in and soak for 1 hour to let the skin come off the peanuts, then gently peel each peanut with your hands, rinse with water and let drain.

  • Boil peanuts

    Place a pot on the stove, add 500ml of water to the pot, boil over medium heat for about 3 minutes until the water boils, then add the peeled peanuts.

    Boil on low heat for about 10 minutes until the peanuts are soft, then use the round net to scoop the peanuts out and let drain.

  • Make the soy sauce mixture

    Add 100ml of soy sauce, 50ml of dark soy sauce, 50ml of oyster sauce, 100gr of sugar, 5gr of star anise, 5gr of cinnamon bark, 5gr of black pepper, and 3 dried chilies into a pan.

    Turn on the heat and stir while cooking on low heat for about 5 minutes until the soy sauce mixture boils and the spices dissolve, then turn off the heat.

    Then, add the boiled and drained peanuts into the soy sauce pan, mix well, and soak for about 5 minutes until the peanuts absorb the soy sauce, then you can serve them immediately in a bowl.
