Ingredients for Vegetarian Dumplings Serves 4
Dumpling wrappers 30 pieces Cabbage 100 gr Carrot 1 piece Oyster mushrooms 100 gr Dried wood ear mushrooms 25 gr Shiitake mushrooms 25 gr (can be replaced with dried straw mushrooms) Green onions 1 tablespoon Garlic 1 bulb Minced ginger 1 teaspoon Cornstarch 1 tablespoon Seasoning 20 gr (soy sauce/ white pepper/ sesame oil/ salt/ pepper/ vegetarian seasoning…)
Tip: If you are a strict vegan and avoid green onions and garlic, you can substitute with leeks!

How to make vegetarian dumplings

Prepare the ingredients
Green onions cleaned and chopped. Garlic peeled and minced. Ginger minced and squeezed for juice.
Soak shiitake mushrooms and wood ear mushrooms in cold water for about 30 minutes to soften.
Remove and rinse, then dice shiitake and wood ear mushrooms. Carrots peeled, shredded, and then diced finely.
Chinese cabbage cleaned and chopped into bite-sized pieces. Oyster mushrooms cleaned and diced finely.

Make the filling
Add the diced mushrooms to a bowl, then add the diced carrots and green onions.
Heat a pan over medium heat, add the chopped Chinese cabbage and diced oyster mushrooms, season with a little salt, 1/2 teaspoon of vegetarian seasoning, add the minced garlic and ginger juice, and a little pepper for fragrance. Stir well to cook the mixture evenly.
Add the carrot, mushroom, and onion mixture to the sautéed cabbage, add cornstarch and mix well; the filling will be more delicious and chewy.

Wrapping the dumplings
Place the dumpling wrapper on your palm, scoop a moderate amount of filling and place it in the center. Then fold the wrapper in half and gently pinch the edges to seal the dumpling.
Tip: You can dab a little water on the wrapper so that the dumpling doesn’t come apart while steaming!

Steaming the dumplings
Boil a pot of water, place the dumplings on a tray and steam for about 10 minutes over medium heat until the dumplings are cooked. Do not steam for too long as it may make the dumplings soggy.

Successful implementation tips:
- Raw dumplings should be stored in a sealed container, kept in the freezer of a refrigerator and can be used within 1 – 2 weeks. When ready to eat, just steam them.
- When steaming the dumplings, cover the lid of the steamer with an additional layer of cloth to prevent steam from dripping down, which can cause the dumplings to cook slowly and become pocked, making them less tasty.
