How to prepare Sardines in Tomato Sauce with Eggs

  • Prepare the ingredients

    Peel and finely chop the shallots and garlic, wash the green onions and cut them into small pieces.

    Wash the tomatoes and cut them into small wedges.

    Open the sardine can in advance for convenience during the cooking process.

  • Stir-fry the tomatoes

    Place a clay pot on the stove over medium heat, add 1 tablespoon of cooking oil. When the oil is hot, add the chopped shallots and garlic to sauté until fragrant.

    When the shallots and garlic turn golden and fragrant, quickly add all the tomatoes and stir-fry for about 2 – 3 minutes until the tomatoes are slightly soft.

  • Mackerel in Tomato Sauce

    When the tomatoes are just soft, add all the mackerel and the mackerel juice from the can into the pot. Add 100ml of water into the can and use chopsticks to stir gently to extract all the remaining sauce from the can.

    Gently stir the mackerel to prevent it from sticking to the bottom of the pot. When the fish starts to boil, add 1.5 tablespoons of fish sauce, 1.5 tablespoons of tomato sauce, 1 tablespoon of sugar, 1 teaspoon of monosodium glutamate, and 1 teaspoon of seasoning powder.

    Crack 1 egg into the pot, continue to cook for about 5 – 7 minutes, then taste and adjust the seasoning to your liking. Turn off the heat and add all the chopped green onions and 1 teaspoon of ground pepper.

  • Prepare the Ingredients

    Crush the garlic, peel it, then chop it finely with a knife. Slice the chili into thin pieces.

    Wash the tomatoes, cut them into quarters, and remove the seeds. Wash the green onions and chop them finely.

    Next, fill the sardine can with water nearly to the top, stir well to dissolve any remaining sauce in the can, then pour all the water into the pot with the fish and heat it over medium heat.

    To season the fish pot, add 1/2 tablespoon of sugar, 1/2 tablespoon of seasoning powder, 3 tablespoons of fish sauce, and stir well for the spices to dissolve. When you see the water in the pot boiling, lower the heat and taste the seasoning again to see if it’s to your liking.

    When the tomato sauce starts to thicken and reduce, turn off the heat, sprinkle in some chopped green onions, and add a little chopped chili to the pot, and your dish is complete.

    Note: Since all the ingredients are already cooked, you don’t need to cook for too long; just heat the fish pot until it’s hot and boiling. Avoid cooking too long as it will make the fish mushy.
