How to choose fresh and delicious quail eggs

  • You can use your hand to feel the surface of the eggshell; if the surface is rough and slightly bumpy, it means the eggs are fresh, while a smooth surface indicates the egg has been stored for a while.
  • When selecting, hold the egg close to your ear and shake it. If there is no sound, it means the egg is still fresh; if there is a sound like liquid sloshing, the egg is old.
  • You can cover the egg with your hand and hold it up to the light. Do not buy eggs that show large air cells because these eggs are old and may be spoiled.

How to cook Canned Sardines with Quail Eggs

  • Boil Quail Eggs

    Put a pot of water on the stove, add the quail eggs and boil for 5 minutes. Then take the eggs out, place them in a bowl of cold water to cool, then peel.

    Peel and finely chop the garlic and shallots. Wash and finely chop the chili. Pick the young leaves and top of the basil, then cut them into bite-sized pieces.

  • Braised fish

    Place a frying pan on the stove, add 2 tablespoons of cooking oil, and heat it up. Add chopped onion and garlic, sauté until they turn golden and fragrant. At this point, turn off the heat.

    Add the entire can of sardines into the frying pan. Add 4 tablespoons of soy sauce, 1/2 tablespoon of sugar, and 1/2 tablespoon of seasoning. Gently stir and then turn on low heat, cooking for 3 – 4 minutes. Adjust the seasoning to taste.

    Add the quail eggs, and cook for another 2 minutes. Add chopped chili and basil leaves, then turn off the heat.

  • Fresh chicken eggs have a rough and slightly textured surface when touched by hand, while smooth eggs have been stored for a long time.
  • Hold the egg up to the light or roll a newspaper and shine it under sunlight; you will see a small air cell, the yolk is round, seems to be immobile and balanced in the middle of the egg, and has an orange or pale pink color, while the white is transparent, indicating that it is fresh chicken egg.
  • Shake the egg gently. If you hear a sound, it means the egg has been stored for a long time and should not be bought; otherwise, if there is no sound, it is a fresh chicken egg.

  • Cooking sardines

    Place a pan on the stove, add 2 spoons of cooking oil, and heat it. Add 1 tablespoon of minced garlic and sauté until golden.

    When the garlic turns golden, add the can of sardines. Measure an additional can of water and pour it into the pan. Boil for about 3 – 4 minutes. Season with 1 tablespoon of sugar and 1 teaspoon of monosodium glutamate.
