How to choose good ingredients
How to choose fresh, quality lemons
- Choose lemons that have a light fragrance, avoid those with a strong, unpleasant odor.
- You should select lemons that are bright in color, have thin skin, smooth, shiny, and firm without any rough or bumpy spots as they will have a higher vitamin content than others.
- Instead of choosing large lemons, opt for medium-sized ones that feel heavy, as heavier lemons will contain more juice and be of better quality.
- Avoid buying lemons that are dark green or have yellow spots on their skin, showing signs of mold, as these are usually old lemons.
- You should purchase lemons that clearly state their origin from reputable places, such as supermarkets, large grocery stores, or order them from e-commerce websites.

How to make Lemon Milk Ice Cream
-
Prepare the ingredients
Use a grater to finely grate the green peel of the lemon, being careful not to take the white part inside the peel as it will make the ice cream bitter.
Grate until you have about 1 teaspoon of lemon peel, depending on your taste you can grate more.
Put 3g of gelatin into a small bowl and add 2 teaspoons of water, soak for about 15 minutes for the gelatin to expand.
-
Heat the gelatin
Add the soaked gelatin into 25ml of lemon juice and then steam the mixture for about 3 minutes until the gelatin dissolves. Then, add 100g of condensed milk and the grated lemon peel into the mixture and stir well.
-
Whip the cream mixture
Add 150ml of whipping cream and 40g of sugar into a blender and blend for about 3 minutes until the cream becomes fluffy. You can also use an egg beater to whip the cream.
After the cream has become fluffy, add the mixture of condensed milk, gelatin, and lemon into the blender and blend for about 2 minutes until the mixture is fluffy and smooth.
Pour the cream mixture into a container or mold of your choice and put it in the freezer refrigerator for about 3 – 4 hours, until the cream mixture hardens, then you can take it out and enjoy!
Tip: If using an ice cream mold, to easily remove the ice cream from the mold, you can dip the mold in warm water for about 10 seconds and then pull the ice cream out.
