How to choose fresh young starfruit
- You should choose starfruit of moderate size, with a dark green color, smooth skin, firm to the touch, and a certain hardness because this indicates fresh starfruit that is quite crunchy.
- If you prefer starfruit that is slightly soft and sweet, you should choose those that are slightly yellow.
- Avoid choosing starfruit that is bruised or has insect bites, or has a rough exterior as these will have a lot of fibers inside, making them less tasty.
How to Make Bilimbi Syrup

Prepare the bilimbi
Wash the young bilimbi briefly in water, then peel it clean, and soak it in a diluted saltwater solution for about 5 – 10 minutes to remove the sap.
Use a fork to poke the body of the bilimbi; the more you poke, the more juice will come out when you squeeze it. Then, place it in the freezer refrigerator and leave it overnight.
Tip: You should prepare a bowl of diluted saltwater in advance; as soon as you finish peeling each bilimbi, place it directly into the bowl to avoid exposure to air, which can affect the taste. -
Marinate the bilimbi with sugar
Take the bilimbi out of the refrigerator, wait for it to thaw, then use your hands to squeeze out all the juice and place it in a bowl.
Next, add 500g of sugar and a little salt to the bowl with the bilimbi, mix well, and marinate for about 2 – 3 hours.
You can also use plastic wrap or a cloth to cover it tightly and expose it to sunlight for about 1 hour to shorten the time.
Tip: You can adjust the amount of sugar to your taste! -
Cook gourd syrup
After 2 – 3 hours, add the marinated gourd to the pan and place it on the stove, turn the heat to high and cook until the gourd juice boils, then reduce the heat.
Continue to stir the gourd for 45 minutes to 1 hour until it turns red, and the syrup thickens; then add 900ml of water to the pan and cook for another 10 minutes before turning off the heat.
Next, add a few drops of vanilla to the pan for a more fragrant gourd syrup, then let the syrup cool before storing it in a glass jar and place it in the refrigerator for later use.
Note: If you do not have a refrigerator, you can store the syrup at room temperature. However, when you want to use it, you should scoop it with a very clean spoon to prevent the gourd syrup from spoiling! -
