How to choose fresh, delicious grapes

  • You should choose grapes with smooth, shiny skin, of moderate size—not too big or too small—and feel a moderate softness when touched.
  • Additionally, freshly picked grapes will have a gentle sweetness with a slight acidity, the stem should still be fresh and firm, and the stem should not fall off the fruit.
  • Avoid choosing bruised, mushy grapes with many tiny black spots caused by pests or prolonged storage.
  • Furthermore, do not choose grapes with rough skin that taste sweet when eaten, with wilted stems but still fresh fruit, having an intense sweetness, as these are grapes that have been soaked in chemicals.

How to distinguish Chinese grapes from Ninh Thuan grapes

  • Ninh Thuan red grapes will be about the size of a thumb, have thin skin, turn bright red or dark red when ripe, and have a sweet taste mixed with a bit of sourness, with the fruits in a bunch being close together. In contrast, Chinese grapes are quite large, have light red skin, a strong sweet taste, and the fruits in the same bunch are separated from each other.
  • Additionally, Ninh Thuan grapes, after being taken out of the refrigerator, are firm, while Chinese grapes tend to be mealy and mushy.
  • Ninh Thuan green grapes have thick skin, a sweet and slightly sour taste, are firm to the touch, with translucent flesh that is slightly soft and contains seeds. Meanwhile, Chinese grapes have no seeds, thin skin, feel quite juicy to the touch, and have a strong sweet taste.

  • Prepare the grapes

    Soak the grapes you bought in a dilute saltwater solution for about 5 minutes, then rinse them with water and let them drain. Next, remove the stems and use a knife to cut them in half, discarding the seeds if there are any.

  • Marinate grapes with sugar

    Put the prepared grapes into a bowl, add about 400g of sugar and use a spoon to mix well so that the sugar is evenly absorbed by the grapes.

    Then, marinate the grapes with sugar for about 2 – 3 hours until the sugar completely dissolves.

  • Cook grape syrup

    After the sugar has completely dissolved, pour the sugar-coated grape mixture into the pot, place it on the stove, turn the heat to low, and stir the mixture for about 30 minutes to extract all the nutrients from the grapes.

    Next, add 250gr of filtered water to the pot and cook for another 5 minutes until the water boils, using a ladle to remove the foam. To add a sour taste to the syrup, squeeze about half a lemon into the pot.

    Stir well to dissolve the lemon into the mixture, then turn off the heat. After that, use a strainer to filter the syrup and let it cool. Pour the grape syrup into a glass with a few ice cubes to enjoy.

    Note: After adding the lemon juice to the syrup mixture, you must turn off the heat immediately; if cooked too long, the grape syrup will become bitter!
