How to prepare Grilled Pigeon with Salt and Chili

  • Prepare the pigeon

    To save time, you can choose to buy pre-prepared pigeons; when you get home, you only need to pluck off the remaining fine feathers from the pigeon’s skin.

    Use white wine mixed with a few slices of fresh ginger and rub it all over the bird’s body, then rinse it thoroughly with water and let it drain.

    Use your hands to evenly spread the sauce mixture all over the pigeon, and the leftover sauce should be placed inside the pigeon’s cavity. Let it marinate for about 30 minutes to allow the flavors to penetrate the meat.

    Preheat the oven to 200 degrees Celsius for 10 minutes.

    Place the pigeons on a tray, then drizzle the remaining sauce over them, put the pigeons in the oven, and grill at 200 degrees Celsius for 10 minutes to finish.

  • Prepare the pigeon

    After buying the pigeon, clean the feathers, then rub it with coarse salt or alcohol for about 5 minutes and then wash it clean.

    Put the pigeon over the fire and char for about 1 – 2 minutes until the skin turns golden and the fine feathers burn off.

    Tip: Besides using charcoal to char the pigeon, you can also use a gas torch to clean the feathers of the pigeon!

How to choose fresh, tender pigeon

  • When buying pre-prepared pigeons, you should select those that look fresh, with pink skin that is not pale.
  • When purchasing, you should lift the wings of the pigeon and gently press with your hand; if the meat feels thick, it indicates a good quality young pigeon. Additionally, press on the breast to check if the meat is tender, as you should select a pigeon with a soft breast for better quality.
  • Avoid choosing those with pale color, any odor, or soft, mushy meat that is not firm; you should not select those that are too small or too large, as their meat will not be as tasty as that of a young pigeon.

How to remove down feathers and eliminate the unpleasant smell of pigeon meat

  • To quickly clean off any remaining down feathers and eliminate the fishy smell of pigeon, you can use a gas torch to roast around the body of the pigeon until the skin turns golden.
  • You can use salt or a mixture of salt and lemon juice to rub all over the pigeon, then rinse with water 1 to 2 times.
