How to choose fresh and delicious fish

  • Choose healthy fish without any scratches on the body, or any bruises or unusual white spots.
  • Pay attention to the fish gills, if they are pink, then the fish is fresh; also, the fish’s eyes should be clear, not cloudy.
  • Gently press on the fish’s flesh; if it feels firm and not mushy, then it is fresh and should be bought.
  • Do not buy if the fish shows signs of leaking fluid, has a purple flesh, or has an unusual fishy smell.

How to prepare Fried Fish with Garlic and Chili Sauce

  • Prepare the fish

    For 2 fish, after buying them, you need to remove the guts and gills. To eliminate the fishy smell, soak the fish in 100ml of vinegar for about 10 minutes, then rinse thoroughly with water and let it drain.

    Put the fish in a bowl, marinate with 1/2 spoon of salt and let it sit for about 15 minutes for the fish to absorb the seasoning.

    How to clean fish without fishy smell:

    • Method 1: Soak the cleaned fish in rice water for 15 minutes, then take it out, rinse with water and let it drain.
    • Method 2: The fish will no longer have a fishy smell if you rub salt thoroughly on both the inside and outside of the fish for 5 minutes, then rinse in clean water and let it drain!

  • Make the sauce

    With 4 cloves of garlic, peel, wash, and 2 chili peppers, remove the stems. Then, put all the garlic and chili into a mortar and pound together with 1 tablespoon of sugar.
