How to make Steamed Snakehead Fish

Prepare vegetables
Wash 2 green onion stalks thoroughly and cut them into pieces.
For 1 large red onion, peel it, wash it, and then use a knife to slice it into wedges.
For accompanying vegetables like lettuce, herbs, water spinach, and celery, remove any wilted or damaged leaves, then soak them in a bowl of diluted salt water to clean off dirt and impurities. After that, rinse with cold water, let them drain, and arrange them neatly on a plate.
Wash the cucumber and green banana, then peel them. The green banana needs to be soaked in diluted salt water to remove the sap. After that, slice them thinly across and arrange them on the plate with the vegetables.

Steamed Snakehead Fish Paste
Add 200g (about 1 fish) of snakehead fish paste along with 2 tablespoons of fish paste soaking liquid into a bowl. Then, add 2 teaspoons of sugar, 1 teaspoon of fried garlic, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of ground pepper, and 1 prepared shallot, and mix well to absorb all the spices.
Place a steamer on the stove, when the water in the pot starts to boil, place the marinated fish paste plate inside and cover, steaming over medium heat for about 20 minutes. After that, open the steamer lid, add 2 green onions and 1 tablespoon of crispy pork fat, and continue steaming for about 3 – 5 minutes before turning off the heat.
